%3C/p%3E%3Cp%3EIt%20is%20freakin'%20cold%20around%20here.%20%20It%20got%20all%20the%20way%20up%20to%204C%20today%20(that's%20about%2040F%20for%20you%20non-metric%20types).%20%20And%20the%20wind%20is%20bitter.%20%20April%20in%20the%20Maritimes%20is%20my%20least%20favorite%20time%20of%20year.%20%20After%20a%20chilly%20run%20to%20the%20market%20and%20Dave's%20Veggie%20and%20Fruit%20store%20I%20wanted%20to%20put%20on%20a%20heart%20warming%20soup.%20%20At%20the%20market%20the%20greens%20are%20making%20their%20seasonal%20reappearance%20(can%20I%20get%20an%20'amen'?!?)%20%20I%20picked%20up%20spinach,%20swiss%20chard,%20tatsoi%20which%20I%20have%20no%20idea%20what%20it%20tastes%20like%20but%20thought%20I'd%20give%20'er%20a%20go....%20basil,%20dill,%20cilantro,%20radish%20greens%20and%20arugula.%20%20Yeah,%20you%20can%20get%20these%20things%20in%20many%20grocery%20stores%20year%20round%20but%20these%20are%20from%20the%20local%20farmers%20and%20I%20love%20to%20support%20our%20local%20folks.%20%20ps.%20everything%20tastes%20better%20too%20;%20)%20%20So%20what%20kind%20of%20soup%20was%20I%20going%20to%20put%20together?%20%20It%20feels%20like%20Minestrone.%20%20I%20know%20I%20blogged%20about%20one%20not%20that%20long%20ago%20(back%20in%20January)%20but%20this%20is%20my%20own%20recipe%20and%20incorporates%20some%20of%20my%20market%20finds%20from%20this%20morning%20(the%20greens%20and%20herbs)%20and%20some%20from%20last%20week%20(the%20carrots%20and%20the%20turnip)%3C/p%3E%3Cp%3ESpring%20Minestrone%3C/p%3E%3Cp%3EServes%208%20-%2010%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EInstructions:%3C/p%3E%3Cp%3EHeat%20the%20oil%20in%20a%20large%20soup%20pot%20over%20medium%20high%20heat%3C/p%3E%3Cp%3ESaute%20the%20onion%20and%20celery%20until%20soft%3C/p%3E%3Cp%3EAdd%20in%20the%20chicken%20and%20brown%3C/p%3E%3Cp%3EAdd%20the%20turnip%20and%20carrots%20and%20saute%20for%205%20minutes%3C/p%3E%3Cp%3EToss%20in%20the%20garlic%20and%20saute%20for%2030%20seconds%3C/p%3E%3Cp%3EAdd%20in%20the%20wine%20and%20scrap%20the%20brown%20bits%20off%20the%20bottom%20of%20the%20pan%3C/p%3E%3Cp%3EAdd%20in%20the%20tomatoes,%20water,%20thyme%20and%20sage.%3C/p%3E%3Cp%3ESimmer%20until%20the%20turnip%20and%20carrots%20are%20tender%20(about%2010-15%20minutes)%3C/p%3E%3Cp%3EMake%20sure%20the%20soup%20is%20boiling,%20add%20in%20the%20pasta%20and%20cook%20until%20al%20dente,%20about%206%20minutes%3C/p%3E%3Cp%3EAdd%20in%20the%20white%20kidney%20beans,%20swiss%20chard,%20spinach,%20basil%20and%20red%20wine%20vinegar,%20simmer%20until%20the%20greens%20are%20bright%20and%20tender%20(just%20a%20couple%20of%20minutes)%3C/p%3E%3Cp%3ETaste!%20%20Add%20salt%20and%20pepper%20as%20necessary.%3C/p%3E%3Cp%3EServe%20with%20a%20good%20sprinkle%20of%20parmesan%3C/p%3E%3Cp%3EThis%20soup%20freezes%20okay%20but%20you%20may%20have%20to%20add%20more%20water/chicken%20broth%20after%20you%20defrost%20it%20as%20the%20pasta%20keeps%20absorbing%20liquid.%20%20I%20have%20frozen%20it%20in%20the%20past%20and%20it%20tastes%20great.%3C/p%3E){kind=link}
