Ingredientes

  • 2 c. Asparagus, sliced diagonally
  • 2 Tbsp. Extra virgin olive oil
  • 1/2 c. Orange juice
  • 3 Tbsp. White wine vinegar
  • 2 tsp Dijon mustard
  • 1/4 tsp Pepper
  • 1 3/8 tsp Salt
  • 2 c. Cooked shell macaroni
  • 1 c. Quartered cherry tomatoes
  • 1 c. Diced yellow bell peppers
  • 1/2 c. Sliced fresh basil leaves
  • 1/3 c. Sliced black olives
  • 1/4 c. Sliced green onions
  • 2 Tbsp. Capers

Direcciones

  1. Steam asparagus for 2 min. Drain and set aside. Combine extra virgin olive oil and next 5 ingredients. Mix well. Set aside. Combine macaroni, cooked asparagus and remaining ingredients. Toss with oil and vinegar dressing combined in bowl earlier.
  2. Yield: 4 to 6 servings.
