Receta Spring Vegetable And Pasta Salad

Ingredientes
- 2 c. Asparagus, sliced diagonally
- 2 Tbsp. Extra virgin olive oil
- 1/2 c. Orange juice
- 3 Tbsp. White wine vinegar
- 2 tsp Dijon mustard
- 1/4 tsp Pepper
- 1Â 3/8 tsp Salt
- 2 c. Cooked shell macaroni
- 1 c. Quartered cherry tomatoes
- 1 c. Diced yellow bell peppers
- 1/2 c. Sliced fresh basil leaves
- 1/3 c. Sliced black olives
- 1/4 c. Sliced green onions
- 2 Tbsp. Capers
Direcciones
- Steam asparagus for 2 min. Drain and set aside. Combine extra virgin olive oil and next 5 ingredients. Mix well. Set aside. Combine macaroni, cooked asparagus and remaining ingredients. Toss with oil and vinegar dressing combined in bowl earlier.
- Yield: 4 to 6 servings.
