%3C/p%3E%3Cp%3EThe%20original%20recipe%20was%20for%20pastries%20called%20Four%20Corner%20Hats,%20filled%20with%20dried%20fruits%20and%20walnuts.%20I%20thought%20they%20were%20so%20cute%20and%20wanted%20to%20use%20my%20blueberries%20in%20them....with%20some%20cheese%20cake%20style%20filling%20instead%20of%20the%20dried%20fruits%20and%20nuts.%3C/p%3E%3Cp%3EThus%20in%20mind,%20I%20happily%20prepared%20the%20pastry:%3C/p%3E%3Cp%3EFour%20Corner%20Hats%20Pastry%3C/p%3E%3Cp%3ECombine%20all%20ingredients...not%20worrying%20about%20any%20minor%20lumps.%3C/p%3E%3Cp%3EEasy-%20peasy%20so%20far.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400'.%20Remove%201/3%20of%20the%20dough%20from%20the%20fridge%20and%20quickly%20roll%20on%20heavily%20floured%20surface%20to%20about%201/8%20inch%20thickness.%20Cut%20into%203%20inch%20circles.%20Place%20a%20heaping%20teaspoon%20of%20filling%20in%20center.%3C/p%3E%3Cp%3EFold%204%20%22sides%22%20of%20the%20circle%20up%20to%20partially%20cover%20the%20filling.%20Most%20of%20the%20filling%20should%20be%20visible.%20Pinch%20sides%20together%20at%20corners.%20Plop%20a%20few%20blueberries%20on%20top%20of%20the%20visible%20filling.%3C/p%3E%3Cp%3EPlace%20on%20a%20greased%20baking%20sheet%20about%201%201/2%20inches%20apart.%20Bake%20for%20about%2012%20minutes%20or%20just%20until%20golden.%3C/p%3E%3Cp%3EAnd%20this%20is%20what%20you%20get......%3C/p%3E%3Cp%3ELovely%20little%20blueberry%20pastry%20pancakes.%20This%20is%20NOT%20what%20the%20picture%20in%20my%20head%20looked%20like.%20At%20all.%20Not%20even%20a%20little%20bit.%3C/p%3E%3Cp%3EBut%20the%20flavor....WOW.%20Ok...think....think...think.....what%20can%20I%20do?%3C/p%3E%3Cp%3EHmm...let's%20pre-bake%20the%20little%20pastries%20and%20then%20fill%20them%20with%20cream%20cheese%20and%20berries.%20Right?%3C/p%3E%3Cp%3EWrong!!%20I%20ended%20up%20with%20a%20pastry%20cookie%20(no%20picture%20provided...just%20imagine%20something%20resembling%20the%20above%20pancakes%20only%20not%20as%20colorful).%3C/p%3E%3Cp%3ESigh.%3C/p%3E%3Cp%3EThis%20is%20the%20point%20where%20you%20will%20find%20me%20walking%20in%20circles%20in%20my%20kitchen,%20occasionally%20opening%20a%20cupboard%20that%20I've%20opened%20a%20million%20times%20over%20the%20years...expecting%20the%20solution%20to%20jump%20right%20out.%20As%20if%20there's%20something%20in%20there%20that%20I'm%20not%20aware%20of.%3C/p%3E%3Cp%3EOr%20that%20I%20have%20forgotten%20that%20I%20had....%3C/p%3E%3Cp%3ERamekins%3C/p%3E%3Cp%3ERAMEKINS!!!%20Oh%20bless%20you!%20You%20sweet%20little%20ramekins.%20The%20answer%20to%20my%20prayers.%20Yes....ramekins!!%3C/p%3E%3Cp%3EHave%20you%20ever%20been%20so%20excited%20about%20a%20set%20of%20ramekins?%20Ya,%20me%20neither.%3C/p%3E%3Cp%3EAnd%20there%20you%20have%20it....Place%20a%20circle%20of%20pastry%20dough%20inside%20a%20greased%20ramekin%3C/p%3E%3Cp%3EAt%20first%20it%20doesn't%20look%20real%20pretty%3C/p%3E%3Cp%3EBut%20work%20it%20in%20and%20trim%20off%20the%20excess.%20I%20had%20the%20pastry%20lined%20up%20with%20the%20little%20rim%20inside%20the%20ramekin%20that's%20about%201/2%20inch%20from%20the%20top.%20The%20pastry%20will%20rise%20while%20baking%20and%20you%20don't%20want%20a%20mess%20after%20all%20this%20work.%3C/p%3E%3Cp%3EDrop%20some%20berries%20in%20the%20bottom%3C/p%3E%3Cp%3EAdd%20a%20couple%20of%20spoonfuls%20of%20cream%20cheese%20mix%20in%20there%20and%20top%20with%20some%20more%20berries%3C/p%3E%3Cp%3EOh...here's%20a%20tip....keep%20all%20dough%20that%20you%20are%20not%20currently%20working%20with,%20in%20the%20fridge.%20Also,%20after%20assembling%20each%20ramekin,%20stick%20it%20in%20the%20fridge%20until%20you%20have%20them%20all%20completed.%20This%20dough%20loses%20itself%20as%20soon%20as%20it%20starts%20to%20warm%20up.%3C/p%3E%3Cp%3EI%20had%20a%20little%20extra%20dough%20left%20so%20I%20cut%20out%20cute%20little%20stars%20and%20placed%20one%20on%20top%3C/p%3E%3Cp%3EI%20wasn't%20sure%20how%20high%20these%20little%20beauties%20would%20rise%20so%20I%20placed%20all%20of%20the%20ramekins%20on%20a%20baking%20sheet%20(to%20catch%20any%20spills).%20Because%20there%20was%20more%20filling%20in%20these%20than%20there%20was%20in%20the%20%22Four%20Corner%20Hats%22,%20I%20turned%20the%20oven%20temp%20down%20to...%3C/p%3E%3Cp%3E375'%20F,%20and%20baked%20for%2023-25%20minutes,%20until%20golden%20brown.%3C/p%3E%3Cp%3EThe%20pastry%20is%20soft%20and%20yummy%20and%20just%20sooo%20good!%20And%20of%20course,%20anything%20with%20cream%20cheese%20or%20that%20is%20cheese%20cake%20like%20is%20a%20winner%20in%20my%20book.%3C/p%3E%3Cp%3EI%20served%20these%20on%20July%204th.%20I%20think%20they'd%20also%20be%20great%20for%20Labor%20Day%20or%20Memorial%20Day%20or%20just%20about%20anytime.%20Just%20change%20the%20fruit%20to%20match%20the%20occasion.%3C/p%3E%3Cp%3EAnd...if%20you%20find%20you%20STILL%20have%20some%20dough%20left....%3C/p%3E%3Cp%3EMake%20a%20cute%20little%20rustic%20free-form%20tartlet%20filled%20with%20only%20fruit.%20It%20just%20might%20be%20the%20first%20thing%20to%20
