Ingredientes

  • 1 sm Acorn squash
  • 2 tsp Fresh lime juice
  • 1 Tbsp. Extra-virgin extra virgin olive oil
  • 1 x Scallion, minced fine

Direcciones

  1. Halve squash lengthwise and throw away seeds and strings. Using outer ridges as a guide, cut squash lengthwise into sections. Arrange squash on a steamer rack in a saucepan and steam over boiling water, covered, till tender, about 15 min.
  2. While squash is steaming, in a bowl whisk together lime juice, oil, and salt and pepper to taste.
  3. On a platter drizzle squash with dressing and sprinkle with scallion.
  4. Yield: 2 servings
