Receta Steamed Acorn Squash With Lime And Scallion

Ingredientes
- 1 sm Acorn squash
- 2 tsp Fresh lime juice
- 1 Tbsp. Extra-virgin extra virgin olive oil
- 1 x Scallion, minced fine

- Halve squash lengthwise and throw away seeds and strings. Using outer ridges as a guide, cut squash lengthwise into sections. Arrange squash on a steamer rack in a saucepan and steam over boiling water, covered, till tender, about 15 min.
- While squash is steaming, in a bowl whisk together lime juice, oil, and salt and pepper to taste.
- On a platter drizzle squash with dressing and sprinkle with scallion.
- Yield: 2 servings
