.%20So%20when%20did%20this%20all%20begin?%20Oh,%20round%20about%20the%20time%20of%20my%20last%20post.%20(Moms%20reading%20this%20post%20are%20smiling%20right%20now%20with%20a%20note%20of%20recognition.)%20So%20instead%20of%20cooking%20and%20blogging,%20I've%20been%20chasing%20-%20and%20what%20fun%20it%20is.%20I%20simply%20adore%20that%20little%20tush%20crawling%20around%20the%20house%20-%20right%20through%20anything%20in%20her%20way.%3C/p%3E%3Cp%3EIt's%20taken%20awhile,%20but%20we're%20adjusting.%20Cabinets%20are%20locked,%20gates%20abound.%20She%20recently%20discovered%20that%20the%20handle%20on%20the%20oven%20makes%20a%20fabulous%20monkey%20bar.%20(Off%20I%20went%20to%20Babies%20R%20Us%20for%20an%20oven%20lock).%20But%20the%20kitchen's%20heating%20up%20as%20everything%20else%20settles%20down.%3C/p%3E%3Cp%3EAs%20is%20usually%20the%20case%20at%20this%20time%20of%20year%20in%20the%20Northeast,%20lobster%20prices%20are%20right%20about%20the%20same%20level%20as%20deli%20meat.%20So%20we%20had%20our%20share%20of%20steamed%20lobster%20and%20then%20I%20ventured%20out%20to%20try%20a%20few%20new%20recipes...%20This%20one%20is%20pretty%20simple%20to%20prepare%20and%20tastes%20great.%20We%20added%20more%20cayenne%20and%20salt%20and%20I%20switched%20the%20original%20shitake%20mushrooms%20to%20oyster%20mushrooms%20(hubby%20hates%20shitakes).%20The%20original%20calls%20for%206%20lobsters,%20but%20I%20cut%20it%20down%20to%20two%20and%20kept%20the%20broth%20proportions%20about%20the%20same%20-%20that%20likely%20accounts%20for%20the%20lack%20of%20saltiness...%3C/p%3E%3Cp%3EAh%20and%20word%20to%20the%20wise%20-%20the%20veg%20stock%20used%20here%20is%20made%20from%20fennel,%20celery%20and%20onion%20with%20parsley%20and%20thyme.%20So%20don't%20think%20you%20can%20skate%20through%20with%20store%20bought%20stock...%3C/p%3E%3Cp%3ESteamed%20Lobster%20in%20Gingered%20Lime%20and%20Scallion%20Broth%20with%20Baby%20Bok%20Choy%3C/p%3E%3Cp%3Eadapted%20from%20Fresh%20from%20the%20Market%20by%20Laurent%20Tourondel%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3ECombine%20the%20onion,%20celery,%20fennel,%20thyme,%20parsley%20stems,%20and%20peppercorns%20in%20a%20medium%20pot%20along%20with%202%20tablespoons%20water%20and%20place%20over%20medium%20heat.%20Sweat%20the%20vegetables%20just%20until%20they%20begin%20to%20wilt,%20making%20sure%20they%20do%20not%20develop%20any%20color.%20Add%206%20cups%20of%20cold%20water%20and%20simmer%20for%2030%20minutes,%20skimming%20the%20top%20as%20necessary%20with%20a%20ladle%20or%20spoon.%3C/p%3E%3Cp%3EStrain%20the%20stock%20through%20a%20fine-mesh%20strainer%20into%20a%20clean%20bowl%20set%20over%20a%20bowl%20of%20ice%20water%20to%20cool.%20Discard%20the%20solids.%20Once%20the%20stock%20has%20cooled,%20transfer%20it%20to%20an%20airtight%20container.%20The%20stock%20will%20keep%20in%20the%20refrigerator%20for%203%20to%204%20days%20or%20several%20weeks%20in%20the%20freezer.%3C/p%3E%3Cp%3EPrepare%20the%20broth%3C/p%3E%3Cp%3EHolding%20the%20lobster%20body%20in%201%20hand%20and%20the%20tail%20in%20the%20other%20hand,%20twist%20the%20lobster%20until%20the%20body%20and%20tail%20separate.%20Repeat%20with%20the%20remaining%20lobster.%20Using%20the%20back%20of%20a%20chef%E2%80%99s%20knife,%20crack%20the%20claws%20off%20the%20lobster%20bodies%20just%20below%20the%20knuckles.%20Reserve%20the%20bodies%20for%20making%20lobster%20stock%20or%20freeze%20them%20for%20another%20use.%3C/p%3E%3Cp%3EBring%20a%20large%20saucepan%20of%20water%20to%20a%20boil%20over%20high%20heat.%20Add%20the%20lobster%20claws%20and%20cook%20until%20the%20shells%20become%20bright%20red%20and%20the%20claw%20meat%20is%20just%20barely%20cooked%20through,%20about%208%20minutes.%20Transfer%20the%20claws%20to%20a%20bowl%20of%20ice%20water.%3C/p%3E%3Cp%3EOnce%20cool,%20remove%20the%20claw%20meat%20from%20the%20shells.%3C/p%3E%3Cp%3EUsing%20a%20chef%E2%80%99s%20knife,%20cut%20the%20lobster%20tails%20in%20half%20lengthwise%20and%20discard%20any%20intestines%20that%20may%20be%20clinging%20to%20the%20tail.%3C/p%3E%3Cp%3ELeave%20the%20meat%20in%20the%20shells.%20Bring%20the%20Chablis%20to%20boil%20in%20a%20large%20saucepan.%20Add%20the%20lobster%20tails,%20%EF%AC%82esh%20side%20down,%20and%20the%20vegetable%20stock.%20Cover%20and%20cook%20until%20the%20lobster%20meat%20is%20just%20barely%20cooked%20through,%20about%203%20minutes.%3C/p%3E%3Cp%3ERemove%20the%20tails%20from%20the%20broth.%3C/p%3E%3Cp%3EUsing%20a%20%EF%AC%81ne-mesh%20strainer,%20strain%20the%20broth%20into%20a%20clean%20medium%20saucepan%20over%20medium%20heat.%3C/p%3E%3Cp%3EAdd%20the%20shitake%20mushrooms,%20ginger,%20and%20ginger%20juice%20to%20the%20broth%20and%20simmer%20until%20the%20ginger%20is%20soft,%20about%203%20minutes.%20Strain%20the%20broth%20again%20through%20a%20%EF%AC%81ne-mesh%20strainer%20and%20into%20a%20large%20saucepan,%20reserving%20the%20mushrooms%20and%20ginger.%3C/p%3E%3Cp%3EFinish%20the%20broth%3C/p%3E%3Cp%3EBring%20a%20medium%20pot%20of%20salted%20water%20to%20a%20boil%20over%20high%20heat.%20Add%20the%20bok%20choy%20and%20cook%20until%20crisp-tender,%20about%203%20minutes.%3C/p%3E%3Cp%3EImmediately%20transfer%20the%20bok%20choy%20to%20a%20bowl%20of%20ice%20water%20and%20allow%20to%20cool.%3C/p%3E%3Cp%3EUsing%20an%20immersion%20blender,%20blend%20the%20cold%20butter%20into%20the%20strained%20broth%20until%20emulsi%EF%AC%81ed.%3C/p%3E%3Cp%3EReturn%20the%20reserved%20mushrooms%20and%20ginger,%20lobster%20claw%20meat,%20and%20blanched%20bok%20choy%20to%20the%20broth%20along%20with%20the%20scallions,%20cilantro,%20lime%20juice,%20lime%20zest,%20and%20cayenne%20and%20continue%20to%20cook%20over%20low%20heat%20for%202%20minutes.%3C/p%3E%3Cp%3ETo%20serve%3C/p%3E%3Cp%3EDivide%20the%20lobster%20tails%20among%206%20large%20shallow%20bowls.%20Arrange%20the%20claw%20meat%20and%201%20bok%20choy%20over%20each%20lobster%20tail.%20Spoon%20the%20sauce%20and%20vegetables%20over%20the%20lobster%20tails%20and%20claws%20and%20serve.%3C/p%3E){kind=link}
