%20which%20she%20assured%20us%20we%20would%20like.%20We%20dug%20in,%20not%20realizing%20that%20our%20minds%20were%20about%20to%20be%20blown.%3C/p%3E%3Cp%3EThe%20sweet,%20coconut%20milk-flavored%20rice%20was%20warm,%20chewy%20and%20delicious%20on%20its%20own.%20But%20paired%20with%20the%20expertly%20sliced%20(cutting%20fruit%20is%20truly%20an%20art%20in%20Thailand)%20buttery,%20perfectly%20ripe,%20yellow%20mango,%20it%20became%20something%20else%20entirely.%3C/p%3E%3Cp%3ENaturally,%20Katie%20and%20I%20polished%20it%20all%20off%20within%20minutes,%20looking%20sadly%20at%20the%20empty%20container%20when%20the%20last%20grains%20of%20sweet,%20sticky%20rice%20were%20gone.%20From%20that%20point%20on,%20we%20bought%20sticky%20rice%20with%20mango%20at%20every%20opportunity,%20something%20I've%20continued%20to%20do%20in%20the%2013%20years%20since%20then.%3C/p%3E%3Cp%3EI%20made%20two%20attempts%20at%20making%20sticky%20rice%20with%20mango%20at%20home%20-%20both%20ended%20in%20utter%20disaster...%20So%20I've%20settled%20for%20ordering%20it%20at%20Thai%20restaurants%20from%20time%20to%20time.%3C/p%3E%3Cp%3EGiven%20the%20depth%20of%20my%20passion%20for%20kao%20niow%20mamuang,%20you%20can%20probably%20imagine%20my%20delight%20when%20I%20saw%20it%20on%20the%20list%20of%20recipes%20I'd%20be%20learning%20at%20the%20excellent%20Thai%20cooking%20class%20I%20took%20three%20years%20ago.%20The%20class%20was%20taught%20by%20Kasma%20Loha%20Unchit,%20an%20expat%20Thai%20woman%20who%20lives%20in%20Oakland,%20California.%20It%20was%20hands-down%20the%20best%20cooking%20class%20I've%20ever%20taken.%20One%20night%20a%20week%20for%20a%20month,%20Kasma%20covered%20the%20basic%20philosophy%20of%20Thai%20cuisine,%20where%20to%20find%20the%20best%20ingredients%20in%20the%20Bay%20area,%20what%20brands%20were%20best%20(preservative%20and%20additive-free%20and%20made%20with%20the%20highest%20quality%20ingredients),%20fascinating%20bits%20of%20Thai%20history%20(for%20example,%20did%20you%20know%20that%20pad%20thai,%20Thailand's%20national%20dish,%20was%20invented%20by%20the%20Chinese?!),%20and%20a%20dizzying%20array%20of%20delicious%20Thai%20recipes.%3C/p%3E%3Cp%3EEnough%20yammering%20though.%20It's%20time%20for%20the%20recipe.%20It's%20very%20easy%20to%20make%20sticky%20rice.%20But%20you%20must%20follow%20a%20few%20basic%20rules:%3C/p%3E%3Cp%3E1.%20Buy%20the%20right%20rice!%20Sticky%20rice%20is%20not%20sushi%20rice,%20that%20is%20a%20different%20variety%20that%20won't%20work%20for%20this%20(I've%20tried%20and%20failed).%20Sticky%20rice%20is%20also%20called%20%22sweet%20rice%22%20or%20%22glutinous%20rice%22.%20According%20to%20Kasma,%20who%20has%20certainly%20done%20her%20research,%20the%20best%20brands%20to%20buy%20are%20Buddha,%20Golden%20Phoenix%20or%20Butterfly.%20If%20at%20all%20possible,%20buy%20a%20rice%20from%20Thailand%20to%20make%20sure%20you're%20getting%20the%20right%20kind.%3C/p%3E%3Cp%3E2.%20Buy%20the%20right%20equipment.%20It's%20super%20easy%20to%20make%20delicious%20sticky%20rice%20if%20you%20have%20the%20right%20equipment,%20namely%20a%20bamboo%20steamer%20and%20a%20steamer%20pot%20made%20specifically%20for%20this%20purpose.%20The%20bamboo%20steamer%20looks%20like%20a%20sort%20of%20odd,%20pointy%20hat%20and%20it%20sits%20point-down%20in%20the%20steamer%20pot.%20Here%20is%20a%20blurry%20picture%20I%20took%20of%20me%20wearing%20the%20steamer%20basket%20as%20a%20hat.%3C/p%3E%3Cp%3EThe%20pot%20is%20shaped%20more%20like%20a%20jug.%20You%20can%20probably%20find%20these%20things%20at%20Asian%20markets%20(if%20they%20stock%20South%20East%20Asian%20goods)%20if%20you%20have%20one%20close%20by.%20However,%20if%20not,%20you%20can%20also%20buy%20them%20online%20for%20$12%20-%20$30.%3C/p%3E%3Cp%3EKasma's%20instructions%20were%20to%20boil%20the%20bamboo%20steamer/hat%20before%20using%20it%20the%20first%20time%20to%20make%20sure%20it%20does%20not%20impart%20a%20really%20bamboo-y%20taste%20to%20the%20rice%20and%20to%20ensure%20that%20it%20is%20clean%20since%20it's%20probably%20traveled%20quite%20a%20distance%20to%20reach%20your%20kitchen.%20Just%20submerge%20it%20in%20a%20large%20pot%20of%20boiling%20water%20for%20a%20few%20minutes.%3C/p%3E%3Cp%3E3.%20Don't%20forget%20to%20soak%20the%20rice!%20This%20is%20the%20part%20that%20has%20derailed%20my%20plans%20a%20couple%20of%20times...%20You%20must%20soak%20the%20rice%20before%20steaming%20for%20at%20least%204%20hours%20(or%20overnight)%20to%20allow%20it%20to%20soak%20up%20extra%20water%20before%20you%20cook%20it.%3C/p%3E%3Cp%3E4.%20Get%20good%20mangoes.%20The%20rice%20will%20still%20be%20tasty%20but%20pairing%20it%20with%20ripe,%20delicious%20mangoes%20will%20make%20a%20big%20difference.%20Manila%20mangoes%20are%20probably%20the%20best%20fit%20for%20this%20recipe%20-%20they%20have%20a%20soft,%20yellow,%20string-free%20flesh%20that%20is%20most%20similar%20to%20the%20Thai%20mangoes.%3C/p%3E%3Cp%3EFollow%20these%20rules%20and%20you'll%20be%20golden!%3C/p%3E%3Cp%3ESticky%20Rice%20with%20Mango%20(Kao%20Niow%20Mamuang)%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E*%20Optional:%203-4%20fresh%20or%20frozen%20whole%20pandanus%20leaves%20(bai%20toey)%20or%20a%20few%20drops%20of%20jasmine%20(mali)%20essence%3C/p%3E%3Cp%3E*%201-2%20ripe%20mangoes,%20peeled%20and%20sliced%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Rise%20the%20sticky%20rice%20once%20or%20twice,%20cover%20with%20tap%20water%202-3%20inches%20and%20soak%20for%20four%20hours%20(or%20overnight).%20The%20rice%20will%20absorb%20much%20of%20the%20water%20and%20grow%20in%20size.%20It%20will%20also%20soften%20such%20that%20the%20grains%20will%20easily%20break%20if%20pressed%20between%20the%20fingers.%3C/p%3E%3Cp%3E2.%20Drain%20the%20rice%20and%20pour%20it%20into%20the%20bamboo%20basket.%20Place%20the%20bamboo%20basket%20to%20steam%20over%202-3%20inches%20of%20water%20in%20the%20metal%20pot.%20Cover%20the%20top%20of%20the%20bamboo%20basket%20with%20a%20smallish%20pot%20lid%20and%20steam%20for%2040-45%20minutes,%20until%20the%20rice%20is%20thoroughly%20cooked%20and,%20well,%20sticky.%3C/p%3E%3Cp%3E3.%20While%20the%20rice%20is%20steaming,%20make%20the%20coconut%20sauce:%20heat%20the%20can%20of%20coconut%20milk%20with%20the%20sugar%20and%20salt%20and%20stir%20until%20the%20grains%20have%20all%20dissolved.%3C/p%3E%3Cp%3E4.%20Once%20the%20rice%20is%20finished,%20dump%20it%20out%20of%20the%20basket%20into%20a%20bowl%20and%20stir%20in%20half%20of%20the%20coconut%20mixture,%20mixing%20well%20to%20combine.%20Slice%20the%20mango%20and%20serve%20with%20the%20rice,%20drizzling%20more%20of%20the%20coconut%20sauce%20over%20the%20rice%20before%20serving.%3C/p%3E){kind=link}
