.%3C/p%3E%3Cp%3EI%20was%20more%20than%20a%20little%20skeptical%20when%20I%20put%20this%20tart%20in%20the%20oven.%20%20I%20didn't%20quite%20believe%20that%20the%20very,%20very%20liquidy%20filling%20could%20possibly%20firm%20up%20in%20the%20oven%20(though%20with%20a%20whopping%203%20TABLESPOONS%20of%20cornstarch,%20I%20should%20have%20had%20faith)%20and%20the%20texture%20was%20deeply%20strange.%20%20When%20I%20pulled%20it%20out%20of%20the%20oven,%20though,%20it%20looked%20like%20angel%20food%20cake,%20but%20had%20a%20lighter%20texture%20and%20more%20delicate%20taste.%20%20Its%20subtle%20sweetness%20coupled%20with%20the%20tart%20fruitiness%20of%20the%20berries%20was%20simply%20delicious.%20%20We%20ate%20the%20tart%20at%20room%20temperature%20at%20first,%20but%20when%20I%20went%20back%20for%20seconds%20(and%20thirds)%20after%20it%20had%20been%20refrigerated,%20the%20texture%20had%20improved%20and%20the%20tastes%20had%20married.%3C/p%3E%3Cp%3EAlso,%20a%20note%20on%20the%20crust:%20%20this%20is%20a%20really,%20really%20special%20crust.%20%20It%20resembles%20nothing%20as%20much%20as%20a%20buttermilk%20biscuit,%20but%20the%20compression%20and%20long%20baking%20makes%20it%20get%20all%20crispy%20and%20delicious.%20%20Any%20other%20crust%20would%20work%20(regular%203-2-1%20pie%20crust%20or%20store-bought),%20but%20you%20should%20give%20this%20one%20a%20try.%20%20It's%20sensational.%20%20Oh,%20and%20in%20case%20the%20strawberries%20are%20already%20all%20gone%20where%20you%20live,%20I%20think%20this%20would%20be%20delicious%20with%20blueberries%20or%20blackberries%20or%20(if%20you%20must)%20raspberries.%3C/p%3E%3Cp%3EThe%20recipe%20was%20a%20little%20more%20complex%20than%20I%20thought%20at%20first,%20so%20I'll%20give%20you%20this%20bit%20of%20advice:%20be%20sure%20you%20read%20the%20whole%20thing%20and%20prep%20everything%20in%20advance%20or%20you%20might%20get%20a%20little%20muddled%20or%20behind.%20%20I%20did%20tweak%20a%20little,%20here%20and%20there,%20as%20is%20traditional.%3C/p%3E%3Cp%3EHeavenly%20Strawberry%20Buttermilk%20Tart%3C/p%3E%3Cp%3Eadapted%20from%20The%20LoveBite%3C/p%3E%3Cp%3EFor%20the%20crust:%3C/p%3E%3Cp%3ETo%20simplify%20matters,%20use%20the%20food%20processor%20to%20make%20the%20crust.%3C/p%3E%3Cp%3ECombine%20flour,%20salt,%20sugar,%20and%20baking%20powder%20and%20pulse%20to%20mix%20well.%20%20Cut%20cold%20butter%20into%20cubes%20and%20add%20one%20at%20a%20time%20while%20processing%20until%20everything%20looks%20like%20sand.%3C/p%3E%3Cp%3EAdd%20the%20egg%20and%20buttermilk.%20Pulse%20a%20few%20times%20until%20the%20pastry%20forms%20a%20ball.%20%20At%20this%20point%20you%20can%20either%20chill%20the%20dough%20for%2030%20minutes%20and%20then%20roll%20it%20out%20before%20fitting%20it%20to%20the%20spring-form%20pan%20OR%20you%20can%20do%20what%20I%20did%20and%20simply%20push%20it%20into%20the%20pan,%20patting%20and%20squishing%20it%20until%20it's%20evenly%20smooshed%20into%20the%20pan.%20%20Then%20cover%20it%20and%20stick%20it%20in%20the%20fridge%20for%2030%20minutes.%3C/p%3E%3Cp%3EPre%20heat%20the%20oven%20to%20350.%20%20Line%20the%20crust%20with%20parchment%20and%20fill%20with%20dried%20beans%20or%20pie%20weights%20and%20then%20blind%20bake%20for%2020%20minutes.%3C/p%3E%3Cp%3EPull%20the%20crust%20out%20of%20the%20oven%20and%20remove%20the%20parchment%20and%20weights.%20%20Use%20a%20fork%20to%20punch%20holes%20in%20the%20bottom%20of%20the%20crust%20to%20deflate.%20%20Bake%20for%20an%20additional%2010%20minutes.%3C/p%3E%3Cp%3EMeanwhile,%20make%20the%20buttermilk%20filling.%3C/p%3E%3Cp%3ECombine%20the%20milk%20and%20butter%20in%20a%20saucepan%20on%20low%20heat%20until%20the%20butter%20melts.%20%20Do%20not%20let%20it%20boil.%20%20Remove%20from%20heat%20when%20the%20butter%20has%20melted.%20%20While%20this%20is%20happening,%20beat%20the%20egg%20yolks,%20cornstarch,%20sugar,%20and%20vanilla%20in%20a%20large%20mixing%20bowl.%3C/p%3E%3Cp%3EWhile%20whisking%20constantly%20(and%20rather%20aggressively),%20pour%20the%20hot%20milk%20in%20a%20slow%20and%20steady%20stream%20into%20the%20egg%20yolk%20mixture.%3C/p%3E%3Cp%3EWhisk%20the%20buttermilk%20into%20the%20milk/yolk%20mixture.%20Add%20the%20lemon%20zest.%3C/p%3E%3Cp%3ESpoon%20about%201/4%20of%20the%20egg%20white%20mix%20and%20fold%20it%20into%20the%20yolk%20mix%20by%20strirring%20from%20the%20bottom%20and%20up%20and%20over%20in%20a%20circular%20motion.%20Add%20the%20rest%20of%20the%20egg%20whites.%20%20Do%20not%20beat%20the%20batter.%20%20You%20want%20to%20retain%20the%20air%20in%20the%20meringue%20as%20it%20will%20make%20the%20filling%20very%20fluffy%20and%20light.%20%20This%20is%20the%20point%20at%20which%20the%20filling%20looks%20really%20really%20weird.%20%20Fear%20not.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20the%20tart%20shell%20and%20sprinkle%20some%20brown%20sugar%20on%20top.%3C/p%3E%3Cp%3EBake%20about%2045%20minutes%20at%20350%20or%20until%20golden%20on%20top.%20%20The%20custard%20will%20still%20jiggle%20a%20little%20and%20be%20just%20barely%20set%
