%20from%20my%20house%20and%20I've%20never%20been.%20I%20don't%20understand%20how%20that's%20happening.%20I%20mean,%20strawberries%20are%20my%20favorite%20fruit...I've%20lived%20here%20all%20my%20life.....how%20do%20I%20keep%20missing%20the%20most%20fabulous%20festival%20of%20the%20year?%3C/p%3E%3Cp%3EI'm%20so%20disappointed%20in%20myself.%20I've%20let%20my%20berry%20love%20down.%20This%20must%20be%20remedied!%3C/p%3E%3Cp%3EIn%20the%20meantime,%20lets%20console%20my%20strawberry%20craving%20with%20a%20delightful%20torte.%3C/p%3E%3Cp%3EThis%20recipe%20was%20inspired%20by%20a%20couple%20of%20recipes%20I%20ran%20into.%20As%20much%20as%20I%20love%20raspberries%20(they%20are%20a%20very%20close%20second%20to%20strawberries...but%20are%20fighting%20for%20that%20position%20with%20blackberries)%20I%20just%20had%20to%20stay%20true%20to%20my%20first%20love.%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20325'%20F.%20Line%20the%20bottoms%20of%202%20round%20cake%20pans%20with%20parchment%20paper%20(you%20can%20spray%20the%20bottom%20with%20cooking%20spray%20before%20placing%20the%20parchment%20paper%20inside,%20to%20keep%20the%20paper%20in%20place).%3C/p%3E%3Cp%3ECake:%3C/p%3E%3Cp%3EPut%20the%208%20oz%20of%20chocolate%20and%20the%20butter%20in%20a%20medium%20sized,%20microwave%20safe%20bowl.%3C/p%3E%3Cp%3EMelt%20the%20chocolate%20and%20butter%20in%20a%20the%20microwave%20(or%20use%20a%20double%20boiler)%20in%2030%20second%20increments,%20stirring%20in%20between%20until%20nearly%20all%20the%20chocolate%20is%20melted.%20Complete%20the%20process%20by%20stirring%20until%20fully%20melted.%3C/p%3E%3Cp%3ESet%20aside%20to%20cool.%20Once%20cool,%20stir%20in%20vanilla%20and%20coffee%20granules.%3C/p%3E%3Cp%3EIn%20a%20food%20process,%20finely%20grind%20the%20almonds.%20Add%20in%20the%20flour%20and%20salt%20and%20transfer%20to%20a%20small%20bowl.%20Set%20aside.%3C/p%3E%3Cp%3EWith%20an%20electric%20mixer,%20beat%20the%20eggs%20in%20a%20large%20bowl%20until%20they%20double%20in%20volume%20(about%205%20minutes).%20Slowly%20add%20the%20sugar%20and%20beat%20for%201%20more%20minute.%20Fold%20in%20the%20cooled%20melted%20chocolate%20until%20just%20combined.%20Sprinkle%20in%20half%20of%20the%20almond/flour%20mixture%20and%20fold%20until%20just%20combine%20then%20sprinkle%20in%20the%20other%20half,%20folding%20until%20just%20combined.%3C/p%3E%3Cp%3EDivide%20the%20batter%20between%20the%20two%20cake%20pans.%20Bake%20for%2015%20minutes%20or%20until%20toothpick%20comes%20out%20with%20only%20a%20few%20crumbs.%3C/p%3E%3Cp%3EAllow%20to%20cool%20in%20the%20pans.%3C/p%3E%3Cp%3EMeanwhile,%20make%20the%20filling%20by%20smashing%20the%20strawberries%20and%20combining%20with%20the%20cream%20cheese.%3C/p%3E%3Cp%3ECarefully%20remove%20the%20cakes%20from%20the%20pans.%20Place%20one%20of%20a%20plate.%20Spread%20the%20filling%20over%20it.%20Place%20the%20other%20cake%20on%20top.%3C/p%3E%3Cp%3EThats%20where%20I%20ran%20into%20some%20problems.%20My%20cake%20crumbled....(I%20think%20I%20may%20have%20slightly%20over%20cooked%20them)%3C/p%3E%3Cp%3EI%20pieced%20it%20together...hoping%20the%20filling%20would%20help%20keep%20it%20in%20place,%20acting%20like%20glue...which%20it%20did.%20But...it%20wasn't%20a%20pretty%20site.%3C/p%3E%3Cp%3EThank%20God%20for%20glaze!!!%3C/p%3E%3Cp%3ELets%20hurry%20up%20and%20make%20that%20glaze%20so%20I%20don't%20have%20to%20see%20this%20mess%20any%20more...%3C/p%3E%3Cp%3EGlaze:%3C/p%3E%3Cp%3EBring%20the%20cream%20to%20a%20boil.%20Place%20the%20chocolate%20into%20a%20medium%20bowl.%20Pour%20the%20hot%20cream%20over%20the%20chocolate%20and%20stir%20until%20melted.%3C/p%3E%3Cp%3ESpread%20the%20glaze%20over%20the%20cake...%3C/p%3E%3Cp%3EThe%20glaze%20will%20thicken%20as%20it%20sets.%3C/p%3E%3Cp%3EGarnish%20with%20strawberries%20and%20a%20bit%20of%20powdered%20sugar%20if%20desired.%3C/p%3E%3Cp%3EAnd%20there%20you%20have%20it.%20A%20delicious,%20seemingly%20beautiful%20dessert%20(who%20can%20see%20the%20crumbled%20section,%20right?%20No%20one%20has%20to%20know...trust%20me)%20that%20is%20bound%20to%20satisfy.%3C/p%3E){kind=link}
