%20and%20how%20to%20create%20more%20traffic%20(like%20with%20Fave%20Southern%20Recipes%20and%20her%20own%20Yum%20Goggle).%3C/p%3E%3Cp%3EStay%20tuned%20for%20the%20recipe!%3C/p%3E%3Cp%3EEven%20though%20Kelli%20is%20only%20about%20150%20miles%20away,%20we%20have%20never%20met.%20%20We%20are%20fellow%20Okies%20and%20I%20do%20wish%20that%20Kelli%20were%20my%20next%20door%20neighbor.%20%20%20(And,%20I%20swear%20that%20when%20I%20am%20in%20Norman%20for%20a%20conference,%20I%20am%20going%20to%20plan%20a%20lunch.%20%20I%20am%20always%20there%20in%20the%20accompaniment%20of%20many%20co-workers%20though%20and%20it%20is%20hard%20to%20break%20away.%20)%3C/p%3E%3Cp%3EWhy%20am%20I%20waxing%20poetic%20about%20Kelli%20and%20all%20her%20domestic%20art%20talents?%20%20Kelli%E2%80%99s%20Kitchen%20was%20my%20assigned%20C.L.U.E.%20assignment%20for%20May.%3C/p%3E%3Cp%3ENot%20only%20was%20I%20super%20excited%20to%20get%20my%20friend%20Kelli%E2%80%99s%20site,%20but%20I%20knew%20that%20I%20could%20find%20lots%20of%20delicious%20berry%20recipes%20there.%20%20The%20theme%20for%20C.L.U.E.%20this%20month%20included%20finding%20the%20best%20berry%20recipe%20ever.%20%20I%20think%20I%20found%20more%20than%20enough%20at%20Kelli%E2%80%99s%20Kitchen.%20Kelli%20learned%20to%20can%20from%20her%20grandmother%20and%20she%20has%20even%20written%20%20two%20canning%20ebooks%20(Nano-Canning:%20%20Basic%20Recipes%20and%20Instructions%20and%20Nano-Canning:%20Specialty%20Jams,%20Jellies,%20and%20Marmalades).%20%20%20A%20lot%20of%20Kelli%E2%80%99s%20recipes%20are%20heirloom%20recipes%20she%20learned%20from%20her%20Nana%20or%20other%20culinary%20diva%20relatives.%3C/p%3E%3Cp%3EA%20few%20berries%20from%20our%20garden.%3C/p%3E%3Cp%3EI%20always%20look%20forward%20to%20the%20spring%E2%80%99s%20bounty%20and%20canning.%20%20I%20especially%20like%20creative%20jams%20that%20have%20unexpected%20ingredients.%20%20%20I%20initially%20wanted%20to%20make%20Kelli%E2%80%99s%20Strawberry%20Balsamic%20Vinegar%20Black%20Pepper%20Jam%20but%20Kelli%20stated%20in%20the%20recipe%20that%20the%20jam%20has%20to%20set%20for%20one%20month%20for%20the%20flavors%20to%20meld%20and%20mellow.%20%20I%20wanted%20something%20I%20could%20enjoy%20now.%20There%20was%20always%20her%20basic%20recipe%20for%20Strawberry%20Jam,%20but%20I%20couldn%E2%80%99t%20resist%20her%20Strawberry-Lemon%20Marmalade.%20%20%20Kelli%20states%20this%20concoction%20tastes%20%E2%80%9Ca%20bit%20like%20sweet%20tart%20candy.%E2%80%9D%20%20I%20liked%20this%20recipe%20because%20I%20could%20start%20test-tasting%20as%20soon%20as%20it%20was%20cool.%3C/p%3E%3Cp%3ELots%20of%20berries%20from%20Stillwell,%20OK.%3C/p%3E%3Cp%3EStrawberry-Lemon%20Marmalade%3C/p%3E%3Cp%3Efrom%20Kelli%E2%80%99s%20Kitchen%3C/p%3E%3Cp%3EZest%202%20of%20lemons%20being%20careful%20not%20to%20let%20any%20pith%20(white%20stuff)%20get%20in.%20%20Add%20to%20cooking%20pot.%3C/p%3E%3Cp%3EPeel%20all%204%20lemons%20then%20cut%20and%20peel%20membrane%20off%20segments%20putting%20pulp%20into%20cooking%20pot.%20%20(Do%20this%20over%20the%20cooking%20pot%20so%20you%20can%20catch%20all%20the%20juice.)%20%20Remove%20any%20seeds.%3C/p%3E%3Cp%3EAdd%203%20cups%20of%20the%20mashed%20strawberries.%20Add%201%20box%20pectin%20and%201%20pat%20butter%20or%20margarine%20(if%20using%20no%20pectin%20method%20omit).*%3C/p%3E%3Cp%3EWhile%20stirring%20continually,%20bring%20to%20a%20hard%20boil%20and%20keep%20there%20for%2030%20seconds.%20Add%20sugar.%20Continue%20stirring,%20getting%20out%20lumps,%20and%20bring%20to%20a%20hard%20boil%20again,%20allowing%20to%20boil%20for%201%20full%20minute.%20If%20it%20begins%20to%20splatter,%20put%20an%20oven%20mitt%20on,%20but%20continue%20to%20stir.%20Don%E2%80%99t%20skimp%20on%20the%20minute.%3C/p%3E%3Cp%3ERemove%20from%20heat%20and%20ladle%20into%20approximately%20ten%20(10)%20sterilized%20half%20%20pint%20jars.%20Place%20on%20sterilized%20flats%20and%20screw%20tops%20on%20finger%20tight.%20Lift%20into%20boiling%20water%20bath%20and%20process%2010%20minutes.%20Remove%20to%20a%20draft-free%20area%20to%20cool%20for%2024%20hours.%3C/p%3E%3Cp%3E*If%20using%20the%20no%20pectin%20method,%20using%20a%20candy%20thermometer,%20stir%20and%20cook%20marmalade%20until%20it%20reaches%20a%20temp%20of%20220%20degree%20Fahrenheit%20or%20104%20degrees%20Celsius%20and%20allow%20to%20stay%20at%20that%20temp%20for%201%20full%20minute.%3C/p%3E%3Cp%3EWhat%20a%20great%20recipe!%20%20This%20has%20just%20the%20right%20amount%20of%20tartness.%20%20We%20have%20enjoyed%20it%20on%20biscuits,%20crackers,%20and%20on%20top%20of%20ice%20cream.%20%20%20I%20would%20definitely%20put%20this%20one%20in%20the%20running%20for%20my%20favorite%20jam%20with%20Peach%20Marmalade%20and%20Apple%20Marmalade%20being%20close%20contenders.%3C/p%3E%3Cp%3ELast%20weekend%20we%20were%20lucky%20enough%20to%20score%2016%20quarts%20of%20Stillwell%20strawberries.%3C/p%3E%3Cp%3EI%20spent%20last%20Saturday%20afternoon%20making%20three%20batches%20of%20strawberry%20jam.%20I%20made%20one%20batch%20of%20Kelli%E2%80%99s%20recipe%20above,%20one%20Vanilla%20Strawberry%20Jam%20batch%20(just%20add%20a%20split%20vanilla%20bean%20to%20a%20basic%20strawberry%20jam%20recipe),%20and%20one%20Balsamic%20Strawberry%20Jam%20(just%20add%20a%20good%20balsamic%20vinegar%20to%20replace%20the%20lemon%20juice%20in%20your%20favorite%20basic%20recipe).%20%20%20With%20sixteen%20quarts,%20I%20also%20have%20three%20bags%20of%20smashed%20berries%20in%20the%20freezer%20ready%20to%20go%20for%20other%20jam%20varieties%20and%20bags%20of%20frozen%20whole%20strawberries.%20(Some%20sangria%20was%20also%20made,%20don%E2%80%99t%20you%20know%E2%80%A6)%3C/p%3E%3Cp%3EI%20plan%20to%20make%20that%20Strawberry%20Balsamic%20Vinegar%20Black%20Pepper%20with%20some%20of%20the%20leftovers,%20Kelli.%3C/p%3E%3Cp%3EAnd,%20Kelli,%20I%20may%20be%20solo%20at%20a%20convention%20next%20October%20in%20Norman.%20%20Let%E2%80%99s%20plan%20something!%3C/p%3E%3Cp%3EUnfortunately,%20my%20Meyer%20lemons%20weren%E2%80%99t%20quite%20ready%20to%20harvest%20for%20this%20recipe.%20%20Otherwise,%20this%20would%20have%20been%20almost%20totally%20%E2%80%9Clocal.%E2%80%9D%20(Nice%20ants!)%3C/p%3E%3Cp%3EMay%20Blogger%20CLUE%20participants%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
