,%20but%20then%20my%20heart%20went%20out%20to%20her%20as%20I%20woke%20up%20on%20the%203rd%20day%20to%20a%20text%20saying%20she%20had%20a%20stomach%20bug%20and%20had%20thrown%20up%20some%204%20times%20that%20morning.%20%20As%20the%20tour%20had%20checked%20out%20of%20their%20hotel,%20my%20poor%20sweetie%20spent%20the%20day%20hugging%20a%20waste%20basket%20on%20the%20bus%20while%20the%20rest%20of%20the%20class%20visited%20the%20Capitol%20Building%20and%20the%20Newseum.%3C/p%3E%3Cp%3ETalking%20to%20her%20briefly%20I%20could%20hear%20her%20tears%20as%20she%20struggled%20to%20remain%20strong,%20but%20my%20heart%20broke%20being%20so%20far%20away.%20%20As%20stomach%20bugs%20do,%20this%20one%20ran%20its%20course%20and%20left%20her%20weak%20but%20feeling%20much%20better%20just%20about%20the%20time%20the%20bus%20pulled%20in%20to%20NYC.%20%20A%20good%20night's%20rest%20had%20her%20back%20on%20her%20feet%20and%20the%20next%20day%20photos%20of%20Broadway%20filled%20my%20phone.%3C/p%3E%3Cp%3EHome%20alone%20with%20anxious%20energy%20I%20headed%20out%20with%20camera%20in%20hand,%20something%20that%20always%20brings%20me%20peace.%20%20A%20long%20walk%20on%20the%20beach%20took%20my%20mind%20off%20the%20miles%20and%20a%20stop%20at%20the%20local%20farmer's%20market%20had%20me%20loading%20up%20on%20fresh%20organic%20California%20Strawberries.%20%20The%20road%20home%20led%20past%20one%20of%20our%20local%20strawberry%20fields%20and%20I%20couldn't%20resist%20jumping%20out%20and%20snapping%20a%20few%20shots%20of%20the%20beautiful%20red%20berries%20as%20I%20watched%20a%20family%20from%20Utah%20pick%20their%20own.%20%20The%20squealing%20of%20the%20little%20girls%20lifted%20my%20heart,%20and%20I%20headed%20home%20with%20my%20fragrant,%20red%20treasures.%3C/p%3E%3Cp%3EMy%20personal%20favorite%20jam%20has%20always%20been%20apricot,%20one%20that%20my%20mother%20used%20to%20make%20for%20me%20with%20the%20fruits%20from%20a%20backyard%20tree%20as%20I%20was%20growing%20up.%20%20Last%20summer,%20however,%20Liv%20tried%20strawberry%20jam%20while%20on%20our%20vacation%20and%20begged%20the%20question,%20%22Why%20don't%20we%20ever%20have%20strawberry%20jam%20at%20home?%22.%20%20Good%20question.%20%20My%20next%20trip%20to%20Trader%20Joe's%20brought%20a%20lovely%20jar%20of%20organic%20strawberry%20jam%20which%20I%20found%20good,%20but%20it%20wasn't%20my%20beloved%20apricot.%20%20Liv%20and%20my%20son%20were%20happy%20though,%20so%20strawberry%20it's%20been%20for%20the%20last%20few%20months.%3C/p%3E%3Cp%3EWanting%20to%20have%20something%20special%20for%20her%20arrival%20home,%20I%20set%20to%20chopping%20my%20sweet,%20freshly%20picked%20market%20berries,%20adding%20sugar%20and%20setting%20the%20mixture%20to%20simmer%20for%20about%20an%20hour.%20%20Knowing%20how%20she%20loves%20vanilla,%20the%20seeds%20from%20a%20plump%20vanilla%20bean%20found%20their%20way%20into%20the%20mixture%20just%20as%20the%20jam%20made%20its%20way%20into%20the%20waiting%20jar.%3C/p%3E%3Cp%3EHaving%20not%20been%20successful%20with%20canning%20in%20the%20past,%20this%20small%20batch%20of%20jam%20produced%20just%20about%20two%20cups%20of%20sweet,%20bursting%20with%20strawberry%20flavor,%20jam%20which%20I%20simply%20placed%20in%20a%20jar%20in%20the%20fridge%20without%20all%20of%20the%20hassle%20of%20the%20canning%20process.%20%20I've%20read%20that%20the%20refrigerated%20jam%20will%20last%20a%20couple%20of%20weeks,%20but%20I%20have%20a%20feeling%20ours%20won't%20be%20around%20that%20long.%3C/p%3E%3Cp%3EShe's%20coming%20home,%20she's%20coming%20home...%20tell%20the%20world,%20she's%20coming%20home.%3C/p%3E%3Cp%3EMy%20leisurely%20breakfasts%20this%20week%20have%20been%20a%20simple%20bowl%20of%20Greek%20yogurt%20sweetened%20with%20a%20touch%20of%20Strawberry%20Jam%20topped%20with%20Vanilla%20Bean%20Granola.%3C/p%3E%3Cp%3ESmall%20Batch%20Strawberry%20Vanilla%20Bean%20Jam%3C/p%3E%3Cp%3EUsing%20Cooking%20Light's%20Fresh%20Strawberry%20Jam%20recipe%20as%20a%20guide,%20I%20created%20a%20version%20suiting%20us%20with%20lower%20sugar%20and%20a%20hint%20of%20vanilla.%20%20Our%20fresh,%20ripe%20berries%20brought%20plenty%20of%20sweetness%20on%20their%20own,%20however%20your%20strawberries%20might%20require%20a%20bit%20more%20sugar%20depending%20on%20the%20time%20of%20year.%20%20Adjust%20to%20your%20taste!%20%20Easy%20to%20make%20and%20bringing%20a%20sweet,%20bursting%20with%20flavor%20concoction%20which%20is%20so%20much%20better%20than%20the%20usual%20store%20bought%20variety,%20this%20jam%20is%20perfect%20for%20someone%20special.%3C/p%3E%3Cp%3ENote%20this%20jam%20does%20not%20set%20up%20as%20much%20as%20one%20with%20added%20pectin%20and%20would%20also%20work%20wonderfully%20as%20a%20sauce%20over%20vanilla%20ice%20cream.%3C/p%3E%3Cp%3EWash%20and%20chop%20strawberries%20and%20add%20to%20a%20pot%20over%20medium-high%20heat%20on%20the%20stove.%20%20Add%20the%20sugar%20and%20stir%20often%20until%20the%20mixture%20comes%20to%20a%20simmer.%20%20Reduce%20heat%20to%20medium-low%20and%20simmer%20lightly%
