%20I%20try%20to%20cook%20up%20my%20zukes%20each%20night%20and%20stash%20some%20away%20in%20the%20freezer,%20but%20we%20always%20seem%20to%20have%20a%20bit%20of%20leftover%20sauteed%20zucchini%20hanging%20around%20in%20the%20fridge.%3C/p%3E%3Cp%3EWe%20tried%20a%20new%20zucchini%20variety%20this%20year,%20Bush%20Baby,%20which%20grows%20a%20shorter,%20rounder%20squash,%20with%20lovely%20dark%20and%20light%20green%20stripes.%20They%20are%20not%20very%20seedy%20and%20have%20a%20nutty%20flavor.%20Like%20all%20zucchinis,%20of%20course,%20they%20are%20reproductive%20champs,%20so%20I%20have%20been%20trying%20to%20pick%20them%20every%20day%20and%20cook%20some%20up%20in%20various%20ways%20for%20our%20summer%20suppers.%20The%20leftover%20cooked%20zucchini%20usually%20gets%20tucked%20into%20the%20freezer,%20but%20the%20other%20night%20I%20thought%20about%20chopping%20some%20up%20into%20some%20other%20leftovers:%20cooked%20rice%20and%20tomato%20sauce%20and%20making%20stuffed%20vine%20leaves.%20Untraditional%20they%20were,%20but%20TASTY!%20The%20fresh%20cilantro%20adds%20a%20nice%20green%20zing%20as%20a%20change%20from%20the%20traditional%20mint%20and%20dill.%3C/p%3E%3Cp%3EOnce%20you%20have%20access%20to%20brined%20grape%20leaves,%20making%20dolmades%20is%20a%20breeze.%20The%20time-consuming%20part%20is%20the%20grape%20leaf%20harvest%20and%20selecting%20the%20perfect-sized%20leaves%20and%20leaves%20without%20Japanese%20beetle%20chomps.%20After%20washing%20the%20leaves,%20rolling%20them%20into%20bundles%20and%20brining%20them%20up%20took%20only%20short%20while.%20But%20if%20you%20have%20them%20brined%20up%20or%20purchase%20grape%20leaves%20already%20preserved,%20all%20you%20need%20to%20do%20is%20basically%20whip%20up%20a%20rice%20salad,%20stuff%20your%20grape%20leaves%20and%20bake%20them.%3C/p%3E%3Cp%3EHere's%20what%20I%20did:%3C/p%3E%3Cp%3EStuffed%20Grape%20Leaves%20with%20Zucchini%20and%20Cilantro%3C/p%3E%3Cp%3EDrain%20leaves%20and%20unfurl.%20Pat%20dry%20and%20reserve.%3C/p%3E%3Cp%3EPour%20half%20of%20tomato%20sauce%20to%20cover%20bottom%20of%20a%201%20quart%20baking%20dish.%20Place%20remaining%20tomato%20sauce%20in%20a%20mixing%20bowl%20with%20rice,%20chopped%20zucchini%20and%20cilantro.%20Don't%20add%20any%20salt%20and%20pepper%20as%20the%20salt%20from%20the%20brined%20grape%20leaves%20will%20seep%20in%20to%20season%20the%20filling%20during%20baking.%3C/p%3E%3Cp%3EPlace%20one%20teaspoon%20of%20this%20rice%20filling%20in%20the%20center%20of%20each%20grape%20leaf.%20Fold%20sides%20in%20first,%20then%20roll%20up%20and%20place,%20seam-side%20down,%20in%20saucy%20baking%20dish.%20I%20found%20that%2036%20stuffed%20grape%20rolls%20covered%20the%20bottom%20of%20my%20baking%20dish,%20but%20you%20may%20haved%20different%20results%20with%20differently-shaped%20baking%20dishes%20and%20differently-sized%20grape%20leaves.%20Any%20leftover%20rice%20stuffing%20can%20be%20seasoned%20with%20a%20little%20brine%20from%20the%20grape%20leaf%20jar%20and%20eaten%20as%20a%20refreshing%20rice%20salad%20later.%3C/p%3E%3Cp%3EDrizzle%20a%20little%20olive%20oil%20over%20the%20top%20and%20cover%20with%20foil.%20Bake%20in%20preheated%20350%20degree%20F%20oven%20for%2030%20minutes.%3C/p%3E%3Cp%3ELet%20cool%205%20minutes.%20Then%20drizzle%20lemon%20juice%20over%20top%20and%20serve.%20Also%20great%20cold!%3C/p%3E%3Cp%3EMangia!%3C/p%3E%3Cp%3EMakes%2036%20stuffed%20grape%20leaves.%3C/p%3E%3Cp%3EA%20refreshing%20dinner%20on%20a%20hot%20and%20steamy%20summer's%20eve.%3C/p%3E%3Cp%3EI%20am%20sending%20a%20platter%20of%20these%20delicious%20stuffed%20grape%20leaves%20over%20to%20Weekend%20Herb%20Blogging,%20a%20weekly%20food%20blogging%20event%20headquartered%20at%20Cook%20(Almost)%20Anything%20At%20Least%20Once.%20WHB%20is%20focused%20on%20the%20Vegetable%20Kingdom%20and%20posts%20which%20show%20how%20to%20grow%20and%20eat%20vegetables,%20fruits%20and%20herbs.%20This%20week,%20Weekend%20Herb%20Blogging%20is%20being%20hosted%20by%20A%20Food%20Lover's%20Journey.%20Stop%20by%20and%20check%20out%20the%20WHB%20roundup%20after%20the%20August%2016%20deadline.%20And%20start%20thinking%20about%20a%20great%20vegetable,%20herb%20or%20fruit%20recipe%20for%20the%20week%20of%20August%2024-30,%20when%20I'll%20be%20your%20WHB%20host.%3C/p%3E){kind=link}
