- 1/2 c orange bell pepper, chopped (or any color!)
- 1 c onion, diced
- 3 garlic cloves, minced
- 2 14-oz cans no-salt diced tomatoes, with their juices
- 1 3/4 c tomato sauce
- 2 c low sodium, fat free chicken broth
- 1 tbs oregano
- Salt/pepper
- 3 c cooked brown rice
