Ingredientes

  • 1 x Pumpkin
  • 6 Tbsp. Oil
  • 2 x Onions, minced
  • 2 cl Garlic, minced
  • 2 x Celery stalks, minced
  • 1 x Green pepper, minced
  • 1 lb Mushrooms, minced
  • 1 c. Cooked, minced spinach
  • 4 c. Cooked rice
  •     Salt & pepper
  • 1 tsp Sage
  • 3/4 tsp Thyme
  • 1/2 tsp Rosemary
  • 1/2 tsp Basil
  • 1/2 tsp Oregano

Direcciones

  1. Wash pumpkin and slice off top as you would for a jack-o'-lantern.
  2. Scoop out seeds and rinse inside of pumpkin.
  3. Heat oil and saute/fry onions, garlic, celery, green pepper and mushrooms for 10 min. Combine with remaining ingredients and place in pumpkin.
  4. Replace lid so it si not tightly sealed.
  5. BAke at 350F in baking dish with 1 inch water for approximately 1 1/2 hrs, or possibly till pumpkin flesh is soft.
