Receta Stuffed Pumpkin

Ingredientes
- 1 x Pumpkin
- 6 Tbsp. Oil
- 2 x Onions, minced
- 2 cl Garlic, minced
- 2 x Celery stalks, minced
- 1 x Green pepper, minced
- 1 lb Mushrooms, minced
- 1 c. Cooked, minced spinach
- 4 c. Cooked rice
- Â Â Salt & pepper
- 1 tsp Sage
- 3/4 tsp Thyme
- 1/2 tsp Rosemary
- 1/2 tsp Basil
- 1/2 tsp Oregano
Direcciones
- Wash pumpkin and slice off top as you would for a jack-o'-lantern.
- Scoop out seeds and rinse inside of pumpkin.
- Heat oil and saute/fry onions, garlic, celery, green pepper and mushrooms for 10 min. Combine with remaining ingredients and place in pumpkin.
- Replace lid so it si not tightly sealed.
- BAke at 350F in baking dish with 1 inch water for approximately 1 1/2 hrs, or possibly till pumpkin flesh is soft.
