Ingredientes

  • 4 x 250 g rabbit legs
  • 150 gm Squid, diced
  • 20 gm Black olive, diced
  • 30 gm Sundried tomatoes, diced
  • 50 gm Red pepper, diced
  • 2 gm Garlic cloves
  • 10 gm Pesto
  • 2 x Yellow bell peppers
  • 2 x Red bell peppers
  • 12 x Cloves garlic
  • 400 gm Spinach
  • 1 x Courgette, large
  • 1 x Aubergine, small
  • 150 gm Green beans
  •     Thyme

Direcciones

  1. For rabbit - pan fry the squid, then the red pepper. Add in black olive and sundried tomatoes, garlic and thyme. Drain and add in pesto, stuffed rabbit leg. Sear in a warm pan and roast in the oven for 12-15 min. Leave to rest for 10 min.
  2. Grill the aubergine and courgette. Blanch the beans, roast peppers and garlic. Cook the spinach in extra virgin olive oil.
