Receta Stuffed Rabbit Leg With Squid

Ingredientes
- 4 x 250 g rabbit legs
- 150 gm Squid, diced
- 20 gm Black olive, diced
- 30 gm Sundried tomatoes, diced
- 50 gm Red pepper, diced
- 2 gm Garlic cloves
- 10 gm Pesto
- 2 x Yellow bell peppers
- 2 x Red bell peppers
- 12 x Cloves garlic
- 400 gm Spinach
- 1 x Courgette, large
- 1 x Aubergine, small
- 150 gm Green beans
- Â Â Thyme
Direcciones
- For rabbit - pan fry the squid, then the red pepper. Add in black olive and sundried tomatoes, garlic and thyme. Drain and add in pesto, stuffed rabbit leg. Sear in a warm pan and roast in the oven for 12-15 min. Leave to rest for 10 min.
- Grill the aubergine and courgette. Blanch the beans, roast peppers and garlic. Cook the spinach in extra virgin olive oil.
