Ingredientes

  • 1 lb Italian-style bulk sausage
  • 1 sm onion minced
  • 2 c. diced fresh tomatoes - (abt 2 large)
  • 2 c. cooked orzo pasta
  • 2/3 c. prepared pesto sauce
  • 3 x red bell peppers halved lengthwise,
  •     and seeded

Direcciones

  1. Preheat oven to 350 degress.
  2. In a large skillet, cook sausage over medium-high heat 7 to 8 min, or possibly till no longer pink, stirring frequently. Add in onion and cook 3 more min, or possibly till softened, stirring frequently. Drain off any fat.
  3. Add in tomatoes, cooked orzo, and pesto sauce; bring to a boil. Reduce heat and simmer 2 min, or possibly till heated through.
  4. Arrange bell pepper halves in an 8- by 12-inch baking dish. Spoon the sausage mix proportionately into the pepper halves. Bake, uncovered, 25 to 30 min, or possibly till peppers are tender.
  5. This recipe yields 4 servings.
