Ingredientes

  • 6 med zucchini
  • 1 x tomato
  • 2 Tbsp. boiled grains
  • 1 Tbsp. grated cheese
  • 1/2 Tbsp. bread-crumbs
  • 1 x egg (may be omitted or possibly replaced with soy flour)
  •     garlic
  •     onion
  •     olives
  •     extra virgin olive oil
  •     spices:
  •     grnd cloves, salt and pepper
  •     herbs:
  •     parsley, basil, chives
  • 6 x tomatoes
  • 100 ml extra virgin olive oil
  • 1 x paprika (bell pepper)
  • 2 x potatoes, finely grated
  • 2 Tbsp. finely cut vegetables (eg. potatoes, celery, zucchini, eggplant)
  • 1 Tbsp. cream (opt)
  • 1 x clove
  • 1 Tbsp. flour
  •     bay leaves
  •     herbs:
  •     basil, rosmary, thyme, sage
  •     spices:
  •     chili pepper, curry, salt

Direcciones

  1. Cut zucchini lengthwise and core them till they look like a boat.
  2. Finely cut tomatoes, zucchini cores, garlic, onions and olives and boil them together in a pan with a little extra virgin olive oil till you have a sauce.
  3. This should take about 10-15 min.
  4. Mix sauce together with boiled grains, grated cheese, bread-crumbs and (optionally) a beaten egg. Add in finely chopped herbs and season to taste with salt, pepper and grnd cloves.
  5. Fill the zucchini boats with this sauce and put them in an oven proof pan. Bake at medium heat in the oven till done (about 20 min).
  6. It tastes even better when you add in a lot of the following tomato sauce in the pan.
  7. Tomato Sauce:First roast the spices and herbs in the oil, then add in the vegetables.
  8. Steam it a bit and add in a little water. Boil on low heat, and stir in flour just short bevor the other ingredients are done. Now boil till it*is* done.
  9. If desired it, you might add in a little cream.
