Receta Stuffed Zucchini

Ingredientes
- 6 med zucchini
- 1 x tomato
- 2 Tbsp. boiled grains
- 1 Tbsp. grated cheese
- 1/2 Tbsp. bread-crumbs
- 1 x egg (may be omitted or possibly replaced with soy flour)
- Â Â garlic
- Â Â onion
- Â Â olives
- Â Â extra virgin olive oil
- Â Â spices:
- Â Â grnd cloves, salt and pepper
- Â Â herbs:
- Â Â parsley, basil, chives
- 6 x tomatoes
- 100 ml extra virgin olive oil
- 1 x paprika (bell pepper)
- 2 x potatoes, finely grated
- 2 Tbsp. finely cut vegetables (eg. potatoes, celery, zucchini, eggplant)
- 1 Tbsp. cream (opt)
- 1 x clove
- 1 Tbsp. flour
- Â Â bay leaves
- Â Â herbs:
- Â Â basil, rosmary, thyme, sage
- Â Â spices:
- Â Â chili pepper, curry, salt
Direcciones
- Cut zucchini lengthwise and core them till they look like a boat.
- Finely cut tomatoes, zucchini cores, garlic, onions and olives and boil them together in a pan with a little extra virgin olive oil till you have a sauce.
- This should take about 10-15 min.
- Mix sauce together with boiled grains, grated cheese, bread-crumbs and (optionally) a beaten egg. Add in finely chopped herbs and season to taste with salt, pepper and grnd cloves.
- Fill the zucchini boats with this sauce and put them in an oven proof pan. Bake at medium heat in the oven till done (about 20 min).
- It tastes even better when you add in a lot of the following tomato sauce in the pan.
- Tomato Sauce:First roast the spices and herbs in the oil, then add in the vegetables.
- Steam it a bit and add in a little water. Boil on low heat, and stir in flour just short bevor the other ingredients are done. Now boil till it*is* done.
- If desired it, you might add in a little cream.
