,%20I%E2%80%99m%20loving%20adapting%20to%20this%20job%20and%20what%20it%E2%80%99s%20already%20doing%20to%20broaden%20my%20kitchen%20skills.%3C/p%3E%3Cp%3EI%E2%80%99m%20going%20to%20attempt%20to%20keep%20up%20a%20few%20series%20of%20summer%20recipes%20here%20while%20I%E2%80%99m%20cooking%20away.%20While%20my%20trusty,%20dusty%20DSLR%20will%20be%20with%20me,%20I%20doubt%20I%E2%80%99ll%20have%20the%20time,%20organization%20or%20brain%20capacity%20to%20use%20it%20much.%20Rather,%20Instagram%20will%20be%20my%20friend%20as%20I%20try%20to%20snap%20some%20somewhat-edible-looking%20images%20of%20the%20amazing%20things%20coming%20out%20of%20the%20kitchen.%20Oh,%20the%20kitchen%20with%20this%20view%20in%20the%20misty%20morning:%3C/p%3E%3Cp%3ENot%20bad,%20huh?%20I%E2%80%99m%20preparing%20to%20utilize%20certain%20moments%20as%20self-centering:%20this%20view%20when%20the%20house%20is%20quiet%20and%20all%20are%20asleep,%20the%20sunshine%20on%20the%20top%20deck,%20a%20shot%20of%20tequila%20while%20I%20wait%20at%20a%20certain%20fish%20counter%20and%20the%20proprietor%20asks%20in%20a%20heavy%20brogue%20how%20things%20are%20going%20and%20how%20I%E2%80%99d%20like%20my%20fish%20cleaned%20(this%20man%20might%20be%20a%20saving%20angel%20for%20the%20next%20few%20weeks)%20in%20the%20middle%20of%20the%20long%20day.%3C/p%3E%3Cp%3EI%E2%80%99ll%20be%20making%20tons%20of%20luncheon%20salads,%20bright%20soups%20and%20rich%20marinades%20to%20keep%20some%20variety%20and%20va-va-voom%20on%20the%20table.%20And%20%7Bhopefully%7D%20getting%20to%20write%20about%20them%20on%20my%20days%20off.%3C/p%3E%3Cp%3EThis%20salad%20was%20narrated%20to%20my%20predecessor%20before%20he%20left,%20without%20specification.%20I%20let%20it%20evolve%20naturally,%20and%20it%E2%80%99s%20both%20refreshingly%20simple%20and%20rich%20in%20flavor%20%E2%80%93%20a%20bit%20of%20bite%20from%20the%20fennel%20bulb%20but%20sweetened%20and%20softened%20with%20good%20orange%20juice.%20I%20was%20psyched%20to%20hear%20a%20really%20positive%20response%20to%20it%20%E2%80%93%20as%20with%20any%20new%20job,%20tiny%20amounts%20of%20praise%20help%20tamper%20anything%20you%E2%80%99ve%20messed%20up%20in%20ignorance%20or%20over-thought.%3C/p%3E%3Cp%3EHappy%20beginning%20of%20summer.%3C/p%3E%3Cp%3ELet%E2%80%99s%20do%20this%20thing.%3C/p%3E%3Cp%3EFennel%20and%20Arugula%20Salad%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ERemove%20fronds%20and%20tough%20outer%20leaves%20of%20fennel%20bulb.%20Thinly%20slice%20the%20remains,%20slicing%20width-wise%20if%20needed%20before%20finely%20slicing%20into%20ribbons.%20Place%20in%20a%20(preferably)%20metal%20bowl.%20Fill%20with%20orange%20juice%20almost%20up%20to%20the%20top.%20Add%20at%20least%202%20Tbsp%20of%20lemon%20juice.%20Taste.%20You%20should%20get%20mostly%20orange%20flavor%20but%20with%20a%20tart%20bite%20of%20lemon.%20Refrigerate%20for%20at%20least%2030%20minutes%20(the%20fennel%20will%20set%20well%20for%20a%20few%20hours).%3C/p%3E%3Cp%3EMeanwhile,%20bring%20a%20small%20fry/saute%20pan%20to%20a%20medium%20heat.%20Add%20pine%20nuts,%20and%20toast%20(flipping%20now%20and%20then)%20until%20the%20oil%20just%20starts%20to%20come%20out%20and%20the%20pine%20nuts%20brown.%20Add%201%20tsp%20olive%20oil%20and%20a%20nice%20pinch%20of%20flaky%20salt.%20Toast,%20constantly%20flipping,%20until%20pine%20nuts%20smell%20fragrant%20and%20are%20slightly%20crisp.%20Set%20aside%20to%20cool.%3C/p%3E%3Cp%3ETo%20assemble:%20divide%20arugula%20on%20four%20plates.%20Drain%20the%20juice%20from%20the%20fennel*.%20Pile%20equally%20on%20top%20of%20arugula.%20With%20a%20vegetable%20peeling,%20grate%20large%20pieces%20of%20Parmesan%20over%20each%20salad.%20Top%20with%20pine%20nuts%20and%20a%20healthy%20twist%20of%20black%20pepper.%3C/p%3E%3Cp%3E*If%20you%20want%20to%20make%20a%20quick%20vinaigrette%20from%20the%20orange/lemon%20mixture,%20whisk%20it%20with%20some%20tart%20vinegar%20(like%20apple%20cider),%20good%20olive%20oil%20and%20any%20combination%20of%20basil,%20oregano,%20black%20pepper,%20fennel%20and%20salt.%20Drizzle%20on%20top.%20The%20salad%20also%20works%20with%20just%20a%20drizzle%20of%20balsamic%20and%20oil%20or%20a%20sweet%20vinaigrette.%3C/p%3E){kind=link}
