%20but%20they%20never%20taste%20quite%20as%20good%20as%20they%20do%20in%20the%20backyard%20on%20a%20warm%20summer%20evening.%3C/p%3E%3Cp%3EHowever,%20the%20one%20thing%20I%20find%20that%20most%20of%20our%20favorite%20summer%20dishes%20(especially%20the%20sides)%20have%20in%20common%20is%20mayo.%20Now,%20I%20love%20mayo.%20I%20eat%20it%20by%20the%20bucket%20loads...on%20sandwiches,%20in%20salads,%20from%20the%20jar%20with%20a%20spoon..okay%20that%20one%20might%20be%20pushing%20it;%20but%20it's%20probably%20my%20most%20used%20condiment.%20But%20during%20the%20hot%20summer%20days,%20sometimes%20mayo%20isn't%20your%20friend.%3C/p%3E%3Cp%3EOne,%20depending%20on%20the%20time%20of%20day,%20mayo%20can%20seem%20a%20little%20heavy.%20We%20like%20to%20eat%20later%20in%20the%20evenings%20during%20summer%20vacation,%20and%20a%20few%20times,%20salads%20with%20mayo%20have%20just%20seemed%20a%20little%20too%20much%20at%20that%20time%20of%20day.%20And%20two,%20this%20being%20the%20biggest%20issue,%20mayo%20and%20sunshine%20do%20NOT%20mix.%20If%20you're%20having%20any%20outdoor%20party%20or%20meal,%20those%20mayo%20filled%20salads%20must%20be%20kept%20chilled,%20and%20let's%20face%20it,%20that's%20not%20always%20practical.%3C/p%3E%3Cp%3ESo,%20I%20set%20out%20to%20make%20a%20delicious,%20summer%20quality%20salad/side%20dish%20that%20didn't%20have%20one%20ounce%20of%20mayo%20in%20it.%20Not%20one%20drop.%20I%20wanted%20something%20with%20a%20lot%20of%20veggies,%20but%20a%20light%20dressing%20that%20would%20could%20hold%20up%20to%20the%20heat%20and%20sunshine.%3C/p%3E%3Cp%3EThis%20is%20what%20I%20came%20up%20with.%20I%20was%20inspired%20by%20artichokes%20and%20olives%20because,%20well,%20if%20I'm%20being%20honest,%20I%20was%20just%20hungry%20for%20them.%20And%20the%20hearts%20of%20palm?%20If%20you've%20never%20had%20them%20they%20fall%20into%20that%20same%20category%20of%20salty,%20briny...mmm%20good.%20They%20are%20one%20of%20Mr.%20E's%20favorites,%20so%20I%20threw%20those%20in%20too.%20If%20you%20go%20to%20look%20for%20them,%20they%20are%20usually%20right%20next%20to%20the%20canned%20artichokes.%3C/p%3E%3Cp%3EFeel%20free%20to%20add%20whatever%20veggies%20you%20love,%20pretty%20much%20anything%20would%20be%20delicious%20in%20here.%20In%20fact,%20I%20wanted%20to%20add%20zucchini%20too,%20and%20simply%20forgot%20it%20at%20the%20store,%20so%20it's%20definitely%20going%20in%20next%20time!%3C/p%3E%3Cp%3ESummer%20salads%20are%20so%20tasty,%20and%20we%20all%20love%20the%20creamy%20mayo%20filled%20ones.%20But%20after%20you've%20eaten%20100%20lbs%20of%20those%20this%20summer,%20maybe%20something%20lighter%20could%20go%20on%20the%20menu%20too!%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20combine%20and%20toss%20all%20veggies.%20In%20a%20small%20bowl%20whisk%20together%20oil,%20vinegar%20lemon%20juice%20and%20garlic%20powder.%20Pour%20over%20veggies.%20Sprinkle%20with%20parsley,%20salt%20and%20pepper.%20Toss%20to%20coat.%20Cover%20and%20chill%20for%20at%20least%20an%20hour%20before%20serving.%3C/p%3E){kind=link}
