%3C/p%3E%3Cp%3EI%20simply%20steamed%20my%20vegetables%20lightly,%20once%20I%20had%20prepared%20them%20.%20.%20.%20keeping%20that%20beautiful%20green%20colour%20.%20.%20.%20I%20love%20my%20veg%20crispy%20tender.%20Todd%20actually%20likes%20his%20a%20bit%20more%20well%20done%20.%20.%20.%20but%20in%20a%20salad%20.%20.%20.%20you%20do%20NOT%20want%20well%20done%20veg!%20(Actually%20you%20never%20want%20them%20really%20well%20done,%20unless%20you%20are%20cooking%20a%20stew%20.%20.%20.%20but%20tell%20that%20to%20the%20man.%20He%20was%20brought%20up%20on%20school%20dinners%20during%20WW2%20and%20has%20a%20must%20be%20cooked%20to%20death%20mentality%20when%20it%20comes%20to%20veg.%20I%20am%20still%20trying%20to%20convert%20him%20after%2012%20years.)%3C/p%3E%3Cp%3EI%20created%20a%20beautifully%20flavoured%20lemon%20and%20mint%20vinaigrette%20to%20toss%20them%20in%20and%20it%20all%20went%20so%20beautifully%20together%20.%20.%20.%20wonderful%20flavours,%20textures%20and%20colours.%20You%20don't%20want%20the%20veg%20to%20sit%20in%20the%20dressing%20for%20too%20long,%20or%20it%20will%20change%20the%20colour%20somewhat.%20It%20will%20still%20taste%20good,%20but%20not%20be%20as%20pretty.%3C/p%3E%3Cp%3EI%20just%20loved%20this%20.%20.%20.%20and%20Todd%20.%20.%20.%20well,%20he%20ate%20all%20his%20up,%20so%20it%20couldn't%20have%20tasted%20all%20that%20bad%20to%20him!%20Seriously,%20he%20did%20like%20it%20too!%20This%20is%20a%20most%20delicious%20way%20to%20get%20in%20some%20of%20your%20five%20a%20day!%3C/p%3E%3Cp%3E*Summer%20Salad%20of%20Peas,%20Beans%20and%20Asparagus%3C/p%3E%3Cp%3Ewith%20a%20Lemon%20&%20Mint%20Vinaigrette*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EThis%20is%20such%20a%20pretty%20green%20colour%20and%20the%20dressing%20is%20fabulous.%20This%20is%20something%20I%20threw%20together%20with%20what%20I%20had%20to%20hand%20and%20it's%20become%20a%20true%20favourite.%20The%20flavours%20are%20delightfully%20fresh%20and%20moreish.%3C/p%3E%3Cp%3ESlice%20the%20snow%20peas%20on%20the%20diagonal%20into%20two%20or%20three%20pieces,%20depending%20on%20the%20size.%20Slice%20the%20haricot%20vert%20diagonally%20into%20several%20pieces%20as%20well.%20Slice%20the%20asparagus%20and%20trim%20off%20the%20pointy%20bits%20on%20the%20stem.%3C/p%3E%3Cp%3EDrop%20the%20haricot%20verts%20into%20the%20steamer%20basket.%20Cover%20and%20steam%20for%20about%202%20minutes.%20Drop%20in%20the%20asparagus.%20Cover%20and%20steam%20for%20a%20further%20minute.%20Drop%20in%20the%20snow%20peas%20and%20fresh%20peas.%20Cover%20and%20steam%20for%201%20to%202%20minutes%20longer.%20You%20want%20vegetables%20that%20are%20bright%20green%20and%20crispy%20tender.%20Drop%20all%20into%20a%20bowl%20of%20ice%20water%20to%20stop%20the%20cooking%20process,%20and%20then%20drain%20well.%20Hold%20until%20you%20are%20ready%20to%20serve%20the%20salad.%3C/p%3E%3Cp%3EWhen%20ready%20to%20eat,%20toss%20the%20crispy%20tender%20vegetables%20in%20the%20dressing%20and%20serve%20immediately.%3C/p%3E%3Cp%3ENote:%20do%20not%20let%20the%20vegetables%20linger%20too%20long%20in%20the%20dressing%20as%20the%20colour%20will%20be%20compromised.%20They%20will%20still%20taste%20wonderful,%20but%20not%20be%20as%20pretty.%3C/p%3E){kind=link}
