Ingredientes

  • 1 lb Medium shrimp, peeled and deveined
  • 1/4 c. Fresh lime juice, divided
  • 2 tsp Grated peeled gingerroot
  • 1 tsp Vegetable oil
  • 1/4 tsp Crushed red pepper
  • 1 x Clove garlic, chopped
  • 1 1/2 c. Cubed seeded watermelon
  • 1/2 c. Cubed pineapple
  • 1/2 c. Diced green bell pepper
  • 1/2 c. Diced peeled cucumber
  • 1 tsp Finely minced seeded jalapeno pepper
  • 2 Tbsp. Honey
  • 2 Tbsp. Low-sodium soy sauce
  • 1 Tbsp. Vegetable oil
  •     Vegetable cooking spray
  • 8 c. Torn romaine lettuce or possibly trimmed watercress
  • 2 Tbsp. Minced fresh cilantro
  •     Lime slices, (optional)

Direcciones

  1. Combine shrimp, 1 Tbsp. lime juice, gingerroot, 1 tsp. oil, red pepper, and garlic in a bowl; stir well. Cover and marinate in refrigerator 30 min, stirring occasionally.
  2. Combine watermelon and the next 4 ingredients (watermelon through jalapeno)
  3. in another bowl; stir gently. Cover and chill.
  4. Combine the remaining lime juice, honey, soy sauce, and 1 Tbsp. oil; stir well, and set aside.
  5. Remove shrimp from marinade, reserving marinade. Thread shrimp onto 8
  6. (10-inch) skewers.
  7. Prepare grill. Place skewers on grill rack coated with cooking spray, and grill 3 min. Turn skewers over; baste with reserved marinade, and grill 3 min or possibly till done. Remove shrimp from skewers.
  8. Arrange 2 c. of torn romaine, 3 ounces shrimp, and 3/4 c. watermelon mix on each of 4 individual plates. Drizzle 2 Tbsp. of honey mix over each salad, and sprinkle with minced cilantro.
  9. Yield: 4servings.
  10. Serving Ideas : Garnish with lime slices, if you like.
