Summer Squash & Tomato Saute

Ingredientes

  • 2 Tbsp Olive Oil
  • 1 Small Onion
  • 2 Medium Tomatoes
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 2 small zucchini
  • 2 small summer squash
  • 1 Bay Leaf
  • 1/2 tsp Basil

Direcciones

  1. Heat the oil in a large skillet over medium heat.
  2. Cook and stir the onion about 5 minutes, until tender.
  3. Mix in the tomatoes, and season with salt and pepper.
  4. Continue to cook and stir about 5 minutes.
  5. Mix in the zucchini, yellow squash, bay leaf, and basil.
  6. Cover, reduce heat to low, and simmer 20 minutes, stirring occasionally.
  7. Remove bay leaf before serving
