Ingredientes

  • 2 1/2 c. Cubed fully cooked low-fat ham
  • 1/3 c. Minced onion
  • 2 x Garlic cloves, chopped
  • 1 tsp Dry oregano
  • 1 tsp Dry thyme
  • 1/4 tsp Cayene pepper
  • 1/4 tsp Pepper
  • 1 Tbsp. Veg. oil
  • 1/3 c. Cider or possibly red wine vinegar
  • 4 c. Cooked rice
  • 3 c. Diced cooked chicken
  • 2 x Celery ribs, thinly sliced
  • 1/2 c. Julienned green pepper
  • 1/2 c. Julienned sweet red pepper
  • 2 x Green onions with tops sliced
  • 1 pt Cherry tomatoes

Direcciones

  1. In a skillet over medium heat, saute/fry the first seven ingredients in oil till vegetables are tender. Remove from the hear; stir in vinegar. Cold for 5 min. In a bow, toss rice, chicken, celery, peppers and onions.
  2. Stir in the ham mix. Cover and refrigeratefor at least 2 hrs. Garnish with tomatoes. I got this recipe from Taste of Home Magazine. Which is a lot of ingredients, but it was worth it.
