Receta Summertime Main Dish Salad

Ingredientes
- 2Â 1/2 c. Cubed fully cooked low-fat ham
- 1/3 c. Minced onion
- 2 x Garlic cloves, chopped
- 1 tsp Dry oregano
- 1 tsp Dry thyme
- 1/4 tsp Cayene pepper
- 1/4 tsp Pepper
- 1 Tbsp. Veg. oil
- 1/3 c. Cider or possibly red wine vinegar
- 4 c. Cooked rice
- 3 c. Diced cooked chicken
- 2 x Celery ribs, thinly sliced
- 1/2 c. Julienned green pepper
- 1/2 c. Julienned sweet red pepper
- 2 x Green onions with tops sliced
- 1 pt Cherry tomatoes

- In a skillet over medium heat, saute/fry the first seven ingredients in oil till vegetables are tender. Remove from the hear; stir in vinegar. Cold for 5 min. In a bow, toss rice, chicken, celery, peppers and onions.
- Stir in the ham mix. Cover and refrigeratefor at least 2 hrs. Garnish with tomatoes. I got this recipe from Taste of Home Magazine. Which is a lot of ingredients, but it was worth it.
