What to do when someone gives you scads of produce from her tomato infested garden? Accept naturally, and then try and figure out what to do with it. I am never one to look any gift produce in the mouth, pit seed or cob. I get my boxes and bags and I go and collect. Time, family, work and too many tomatoes caused me to finally do something that I'd been talking about for years. I bought a dehydrator.

Why I never bought one of these before I'll never know since it was always one of those devices I'd always thought about owning. Many times late at night, my finger would linger on the one click purchase button at any number of sites and then I'd get distracted "Look cows!" and move on. Well, finally I clicked.     Way to go, Kathy! I had an old American Harvest dehydrator for over 20 years, and used it to dry everything, at one point or another. It finally died, and I didn't replace it for a few years. I realized how much food I was wasting by freezing it, and then having to toss it out due to freezer burn.
    I finally bought a new dehydrator last spring and immediately launched into my "beef jerky" thing. I made a huge amount for my husband to nibble on while I was away at work for the summer, and when I returned, it was all gone.
    It's now the perfect time of year to dust it off and start drying the bounty of fruits and vegetables (and cows) that are out there on sale.
    Have fun with it; I sure do!

      Funny you mention it .. I bought a dehydrator at a yard sale several years ago and basically have used it for beef and deer jerky . I look forward to trying this with the abundance of tomatoes I have been blessed with this year
