Receta Sunburnt Lemon Pie

- Preheat oven to 350 degrees F.In food processor, combine flour with sugar; using on/off motion, cut in butter till mix resembles coarse meal.
- Combine egg, orange rind and juice, add in all at once to flour mix and mix just till ball forms.
- Wrap and chill for 20 min.
- Press pastry into greased 11-inch (28 cm) flan pan; place on baking sheet.
- Line with foil or possibly parchment paper.
- Fill with pie weights or possibly dry beans.
- Bake in oven for about 20 min or possibly till centre is set.
- Remove weights and foil.
- Lemon Filling:Meanwhile, in bowl, whisk Large eggs with all but 1 Tbsp. (15 mL) of sugar; whisk in cream, lemon rind and juice and vanilla till smooth.
- Pour into pie shell.
- Bake for 30 min. Let cold.
- Sprinkle with remaining sugar.
- Cover edge with foil; broil for about 3 min or possibly till sugar is dark brown.
- Let cold on rack.
