Ingredientes

  • 1 c. all purpose flour
  • 1/4 c. granulated sugar
  • 1/3 c. butter
  • 1 x egg
  • 1 tsp grated orange, rind
  •     tbsp orange, juice
  •     Lemon Filling
  • 6 x egg
  • 3/4 c. granulated sugar
  • 3/4 c. whipping cream
  • 1 tsp grated lemon, rind
  • 1/2 c. lemon, juice
  • 2 tsp vanilla

Direcciones

  1. Preheat oven to 350 degrees F.In food processor, combine flour with sugar; using on/off motion, cut in butter till mix resembles coarse meal.
  2. Combine egg, orange rind and juice, add in all at once to flour mix and mix just till ball forms.
  3. Wrap and chill for 20 min.
  4. Press pastry into greased 11-inch (28 cm) flan pan; place on baking sheet.
  5. Line with foil or possibly parchment paper.
  6. Fill with pie weights or possibly dry beans.
  7. Bake in oven for about 20 min or possibly till centre is set.
  8. Remove weights and foil.
  9. Lemon Filling:Meanwhile, in bowl, whisk Large eggs with all but 1 Tbsp. (15 mL) of sugar; whisk in cream, lemon rind and juice and vanilla till smooth.
  10. Pour into pie shell.
  11. Bake for 30 min. Let cold.
  12. Sprinkle with remaining sugar.
  13. Cover edge with foil; broil for about 3 min or possibly till sugar is dark brown.
  14. Let cold on rack.
