%20the%20weather%20was%20glorious%20and%20we%20spent%20all%20morning%20and%20a%20large%20chunk%20of%20the%20afternoon%20in%20the%20garden.%20%20I%20eschewed%20the%20chicken%20pie%20that%20I'd%20planned%20to%20make%20for%20lunch%20and%20instead%20served%20up%20a%20huge%20bowl%20of%20chicken%20salad%20with%20bacon,%20avocado,%20green%20beans%20and%20new%20potatoes.%20%20Scattered%20with%20tarragon%20and%20dressed%20with%20my%20all-purpose%20honey%20mustard%20dressing,%20it%20was%20a%20hit%20with%20everyone%20present%20and%20much%20lighter%20eating%20than%20pie%20would%20have%20been%20on%20a%20warm%20day.%3C/p%3E%3Cp%3EOf%20course,%20the%20abandonment%20of%20my%20pie%20plans%20did%20mean%20that%20there%20was%20a%20sheet%20of%20ready-rolled%20puff%20pastry%20now%20languishing,%20without%20purpose,%20in%20the%20'fridge.%20%20With%20leek%20and%20potato%20soup%20on%20the%20cards%20for%20lunch%20today,%20I%20decided%20to%20knock%20up%20some%20Blue%20Cheese%20and%20Hazelnut%20Palmiers%20to%20go%20with%20it%3C/p%3E%3Cp%3EMy%20Latest%20Leek%20and%20Potato%20Soup%3C/p%3E%3Cp%3Elump%20of%20butter%3C/p%3E%3Cp%3E6-8%20thin%20slices%20of%20pancetta,%20chopped%3C/p%3E%3Cp%3E6%20thin%20leeks,%20halved%20and%20sliced%3C/p%3E%3Cp%3E2%20large%20potatoes,%20peeled%20and%20chopped%3C/p%3E%3Cp%3E1.2%20litres%20chicken%20stock%3C/p%3E%3Cp%3E2%20bay%20leaves%3C/p%3E%3Cp%3Ewhite%20pepper%3C/p%3E%3Cp%3EMelt%20butter%20in%20a%20large%20pan,%20fry%20the%20pancetta%20for%20a%20few%20minutes%20to%20let%20the%20fat%20begin%20to%20run,%20then%20turn%20the%20prepared%20leeks%20in%20the%20juices%20until%20well%20coated.%20Add%20the%20potatoes,%20mixing%20in%20well,%20then%20pour%20in%20the%20stock,%20add%20the%20bay%20leaves%20and%20bring%20to%20the%20boil.%20Cover%20and%20simmer%20for%2030%20minutes,%20until%20the%20vegetables%20are%20really%20soft.%20Remove%20the%20bay%20leaves%20and%20pur%C3%A9e.%20I%20use%20my%20BAMIX%20with%20the%20'C'%20blade,%20but%20use%20what%20you%20like.%20%20Season%20with%20white%20pepper%20only%20(the%20pancetta%20is,%20I%20feel,%20quite%20salty%20enough).%3C/p%3E%3Cp%3ENow%20for%20the%20accompaniment.%20%20Palmiers%20are%20dead%20easy%20to%20make%20with%20a%20ready-rolled%20sheet%20of%20puff%20pastry%20and%20the%20folding%20is%20straightforward.%20%20I've%20taken%20loads%20of%20pictures%20to%20show%20you%20what%20I%20mean,%20because%20I%20think%20it%20would%20be%20very%20difficult%20to%20explain%20clearly%20with%20words%20alone.%20%20I%20hope%20you%20give%20them%20a%20go,%20you%20can%20change%20the%20fillings%20easily%20to%20suit%20yourself,%20my%20boys%20are%20rather%20keen%20on%20pesto%20palmiers%20with%20extra%20pine%20nuts%20and%20parmesan.%20%20Just%20remeber%20you%20need%20something%20'spready'%20and%20one%20or%20two%20'scattery'%20things%20and%20you're%20away...%3C/p%3E%3Cp%3EMix%20the%20crumbled%20cheese%20and%20the%20butter%20together,%20mashing%20and%20stirring%20to%20form%20some%20semblance%20of%20a%20paste.%20%20Using%20three-quarters%20of%20the%20cheese%20mix,%20dot%20teaspoons%20of%20this%20across%20the%20whole%20sheet%20of%20pastry,%20spreading%20it%20out%20as%20best%20you%20can%20,%20then%20scatter%20over%20the%20roughly%20chopped%20nuts.%20%20Fold%20the%20long%20edges%20of%20pastry%20into%20the%20centre.%3C/p%3E%3Cp%3ENow%20spread%20the%20remaining%20cheese%20over%20the%20uppermost%20surface%20and%20sprinkle%20with%20the%20finely%20chopped%20nuts.%20Fold%20the%20entire%20sheet%20in%20half%20(I%20use%20my%20silicone%20pastry%20mat%20to%20help),%20then%20wrap%20it%20up%20and%20chill%20it%20for%20at%20least%20an%20hour%20to%20firm%20up.%3C/p%3E%3Cp%3EWhen%20it's%20had%20a%20good%20rest,%20cut%20the%20log,%20with%20a%20very%20sharp%20knife,%20into%20half-centimetre%20slices.%20%20Put%20these,%20well-spaced%20and%20as%20shown,%20onto%20a%20lined%20baking%20sheet%20(parchment%20is%20absolutely%20fine%20and%20dandy%20if%20you%20don't%20have%20silicone%20mats)%20and%20bake%20for%2025-30%20minutes%20at%20180%C2%BAc%20until%20golden,%20crisp%20and%20toasty.%3C/p%3E%3Cp%3ERemove%20the%20palmiers%20to%20a%20cooling%20rack%20as%20quickly%20as%20you%20can.%3C/p%3E%3Cp%3EThese%20are%20good%20either%20warm%20or%20cold;%20they%20are%20fabulous%20to%20go%20with%20drinks%20before%20dinner%20and%20keep%20for%20a%20few%20days%20in%20a%20tin%20(or%20they%20would,%20if%20my%20lot%20weren't%20so%20flaming%20greedy..!).%20%20You%20can%20also%20prepare%20the%20logs,%20slice%20them%20and%20freeze%20the%20slices%20to%20cook%20from%20frozen.%20Just%20allow%20a%20little%20extra%20cooking%20time.%3C/p%3E%3Cp%3ECath%20xx%3C/p%3E){kind=link}
