%20was%20unappealing,%20both%20in%20flavor%20and%20appearance.%20It%20wasn%E2%80%99t%20purely%20Middle%20Eastern,%20like%20Kaukab%E2%80%99s,%20nor%20was%20it%20American.%20It%20was%20her%E2%80%99s,%20alone.%3C/p%3E%3Cp%3EWhich%20made%20Sunday%20evening%20dinner%20all%20the%20more%20tasty.%20Ham%20sandwiches,%20with%20lettuce%20and%20tomato,%20on%20white%20bread.%20That%20was%20it.%20Nothing%20fancy.%20Just%20a%20large%20heap%20of%20chipped%20ham%20that%20my%20father%20would%20retrieve%20from%20the%20neighborhood%20Lawson%E2%80%99s%E2%80%93a%20forerunner%20of%20a%207-11,%20and%20any%20Clevelander%20would%20remember%20fondly.%20They%20sold%20Salem%20potato%20chips%20and%20the%20best%20french%20onion%20chip%20dip.%3C/p%3E%3Cp%3EWell,%20Lawson%E2%80%99s%20is%20long%20gone,%20and%20the%20idea%20of%20chipped%20ham%20for%20dinner%20didn%E2%80%99t%20appeal%20to%20me%20the%20way%20it%20did%20then.%20Some%20things%20are%20better%20left%20in%20the%20past,%20I%20suppose.%3C/p%3E%3Cp%3EInstead,%20I%20made%20salmon.%3C/p%3E%3Cp%3EIt's%20Not%20Ham%3C/p%3E%3Cp%3EIt%20had%20been%20a%20long%20time%20since%20I%20had%20cooked%20any%20and%20the%20family%20was%20excited%20to%20hear%20that%20I%20was%20to%20prepare%20the%20pretty,%20pink%20fish.%20I%20like%20to%20make%20a%20quick%20Asian-inspired%20marinade%20and%20use%20a%20cast%20iron%20skillet%20or%20grill%20pan%20of%20the%20same%20ore.%20It%20gives%20the%20fish,%20or%20anything%20I%20sear,%20a%20nice%20brown%20crust.%3C/p%3E%3Cp%3EI%20also%20had%20a%20few%20Yukon%20Gold%20potatoes%20(I%20feel%20a%20geological%20theme%20going%20on)%20hanging%20around%20and%20decided%20to%20cut%20them%20up%20and%20boil%20them,%20to%20throw%20in%20along%20with%20some%20cooked%20green%20beans,%20and%20dress%20them%20with%20a%20simple%20vinegarette%20of%20lemon,%20dijon%20mustard,%20olive%20oil,%20sea%20salt,%20and%20a%20little%20cracked%20pepper,%20while%20still%20warm.%20It%20was%20a%20perfect%20complement%20to%20the%20fish.%20Usually,%20I%20make%20a%20nice%20rice,%20but%20I%20wasn%E2%80%99t%20feeling%20especially%20prolific%20Sunday%20night%E2%80%93a%20point%20Kaukab%20will%20surely%20take%20up%20with%20me%20the%20next%20time%20we%20fashion%20a%20visit.%3C/p%3E%3Cp%3EHere%20are%20the%20ingredients%20I%20used%20to%20make%20the%20Asian-inspired%20marinade.%20Mind%20you,%20I%20don%E2%80%99t%20measure,%20so%20these%20%E2%80%9Cquantities%E2%80%9D%20are%20circumspect,%20at%20best.%3C/p%3E%3Cp%3Ecanola%20oil,%20enough%20to%20whisk%20in%20to%20even%20out%20the%20soy,%20about%201/2C%20to%203/4C.%3C/p%3E%3Cp%3EPour%20all%20into%20a%20large%20plastic%20bag,%20preferrably%20one%20with%20a%20zip-top.%20Add%20in%20a%20few%20(4%20or%205)%20while%20the%20pan%20is%20heating%20up.%20(While%20your%20first%20batch%20are%20cooking,%20place%20the%20remaining%20ones%20in%20the%20marinade%20to%20ready%20them%20for%20cooking.)%3C/p%3E%3Cp%3EHeat%20pan%20on%20med.%20high.%20Do%20not%20put%20any%20oil%20in.%20You%E2%80%99ll%20have%20enough%20from%20the%20fish%20marinade.%20When%20hot%20enough,%20place%203%20or%204%20(depending%20on%20your%20pan)%20and%20cover%20pan.%20Mine%20were%20rather%20thin,%20so%20it%20took%20a%20couple%20minutes%20before%20they%20were%20ready%20to%20flip.%20(You%E2%80%99ll%20know%20when%20they%E2%80%99re%20ready%20to%20flip%20when%20you%20see%20the%20fish%20sides%20turning%20whitish-pink%20reaching%20about%20half-way%20up.)%20Once%20you%20flip%20them,%20turn%20heat%20to%20medium%20and%20return%20cover.%20Wait%20another%20minute%20or%20two%20and%20check.%20You%20want%20the%20inside%20to%20still%20have%20a%20little%20pink.%20Touch%20the%20fillet%20with%20your%20finger.%20You%20should%20still%20feel%20some%20give.%3C/p%3E%3Cp%3EPlace%20cooked%20fillets%20on%20plate%20and%20cover%20lightly%20with%20foil%20to%20keep%20warm%20and%20moist.%20Serve%20with%20your%20favorite%20side.%3C/p%3E%3Cp%3EThe%20boys%20didn%E2%80%99t%20care%20for%20my%20new%20twist%20on%20an%20old%20favorite,%20but%20maybe%20your%20side%20will%20fare%20better.%3C/p%3E%3Cp%3EI%E2%80%99m%20thinking%20about%20taking%20the%20boys%20to%20Cleveland.%20See%20if%20that%20might%20change%20their%20minds%20about%20my%20sides.%3C/p%3E%3Cp%3ETags:%20Asian-inspired%20marinades,%20family,%20green%20beans%20and%20potatoes,%20humor,%20lemon%20dressing,%20salmon,%20Sunday%20dinners%3C/p%3E){kind=link}
