%20fresh%20pasta!!%20I%20love,%20love,%20love%20fresh%20pasta.%20And%20it%20really%20is%20pretty%20simple%20to%20make.%20But%20it's%20messy.%20And%20it%20takes%20a%20while.%20So%20-%20it%20does%20end%20up%20being%20a%20special%20meal%20for%20us.%20Hence,%20it's%20perfect%20for%20Sundays!%3C/p%3E%3Cp%3EI've%20never%20made%20flavored%20pasta%20before,%20but%20I've%20been%20toying%20with%20idea%20for%20a%20while.%20Searching%20the%20fridge%20and%20cupboards%20today,%20I%20decided%20to%20do%20a%20lemon%20pepper%20linguine.%20It%20turned%20out%20really%20nice,%20with%20the%20lemon%20flavor%20coming%20through%20very%20subtly%20and%20just%20adding%20a%20bit%20of%20brightness%20to%20the%20dish.%20I%20kept%20it%20simple%20by%20tossing%20it%20with%20a%20sauce%20of%20diced%20tomatoes,%20artichoke%20hearts,%20olive%20oil%20and%20shredded%20goat%20cheese.%20It%20was%20a%20fresh,%20bright%20dish%20that%20really%20hit%20the%20spot%20on%20this%20dreary%20day.%3C/p%3E%3Cp%3ELemon%20Pepper%20Pasta%20Primavera%3C/p%3E%3Cp%3E(Serves%204%20hungry%20bellies)%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPlace%20flour%20in%20a%20large%20bowl%20and%20make%20a%20well%20in%20the%20middle.%20Put%202%20eggs%20and%201%20egg%20white%20into%20center%20of%20well.%20Add%20lemon%20juice%20and%20lemon%20pepper%20seasoning.%20With%20a%20fork,%20beat%20eggs%20and%20lemon%20together.%20Slowly%20start%20to%20pull%20flour%20into%20the%20egg%20mixture%20from%20the%20sides%20of%20bowl.%20Continue%20pulling%20flour%20into%20egg%20until%20mixture%20is%20too%20stiff%20to%20mix%20with%20the%20fork%20anymore.%3C/p%3E%3Cp%3EPour%20out%20dough%20onto%20a%20cutting%20board%20and%20knead%20with%20hands%20to%20further%20combine%20ingredients.%20If%20dough%20is%20too%20dry,%20add%20a%20small%20splash%20water%20and%20continue%20to%20knead,%20adding%20a%20little%20more%20as%20needed%20to%20get%20dough%20to%20come%20together.%20(Alternatively,%20if%20dough%20is%20too%20sticky,%20add%20a%20small%20amount%20of%20flour%20at%20a%20time.)%20Continue%20kneading%205-10%20minutes%20until%20dough%20is%20consistent%20in%20color%20and%20texture.%20Cover%20dough%20with%20a%20wet%20kitchen%20towel%20and%20let%20rest%2015%20minutes.%3C/p%3E%3Cp%3ESet%20sheets%20of%20pasta%20on%20floured%20surface%20and%20let%20dry%20about%2020%20minutes.%3C/p%3E%3Cp%3EPut%20linguine%20attachment%20on%20pasta%20machine.%20After%20sheets%20have%20dried%20for%2020%20minutes,%20run%20them%20through%20the%20cutting%20attachment%20one%20at%20a%20time%20and%20hang%20up%20cut%20pasta%20to%20dry.%20Repeat%20with%20all%20sheets.%3C/p%3E%3Cp%3E(I%20used%20a%20clothes%20drying%20rack%20-%20wiped%20down%20first,%20of%20course%20-%20for%20drying.%20The%20back%20of%20a%20chair%20will%20also%20work.)%3C/p%3E%3Cp%3ELet%20linguine%20ribbons%20dry%20about%20an%20hour.%20(This%20keeps%20the%20noodles%20from%20disintegrating%20and/or%20sticking%20together%20too%20much%20when%20you%20cook%20them.%20Trust%20me.%20Experience%20talking%20here!)%3C/p%3E%3Cp%3EAfter%20an%20hour,%20bring%20a%20large%20pot%20of%20water%20with%20a%20few%20pinches%20of%20sea%20salt%20added%20to%20boil.%20While%20waiting%20for%20it%20to%20come%20to%20a%20boil,%20start%20making%20the%20sauce.%20Heat%20olive%20oil%20in%20a%20skillet%20over%20medium%20heat.%20Add%20minced%20garlic%20and%20cook%20just%20until%20fragrant.%20Add%20tomatoes%20and%20artichokes.%20Reduce%20heat%20to%20low,%20cover%20and%20let%20simmer.%3C/p%3E%3Cp%3EWhen%20pasta%20water%20boils,%20add%20all%20of%20the%20pasta%20noodles.%20Boil%204-5%20minutes%20until%20pasta%20floats%20and%20is%20firm%20to%20the%20bite.%20Drain%20pasta%20and%20add%20to%20sauce.%20Toss%20to%20mix.%3C/p%3E%3Cp%3EPlate%20pasta%20and%20sprinkle%20with%201/4%20of%20the%20shredded%20cheese.%20Enjoy!%3C/p%3E){kind=link}
