Ingredientes

  • 1 c. graham cracker crumbs
  • 3 Tbsp. sugar
  • 3 Tbsp. margarine -- melted
  • 24 ounce cream cheese -- softened
  • 1 c. sugar
  • 3 Tbsp. all-purpose flour unbleached
  • 2 Tbsp. lemon juice
  • 1 Tbsp. lemon peel -- grated
  • 1/2 tsp vanilla extract
  • 3 x Large eggs
  • 1 x egg white
  • 3/4 c. sugar
  • 2 Tbsp. cornstarch
  • 1/2 c. water
  • 1/4 c. lemon juice
  • 1 x egg yolk

Direcciones

  1. Crust: Combine graham cracker crumbs, sugar, and margarine. Press onto bottom of 9" springform pan. Bake at 325 F for 10 min.
  2. Filling: Combine cream cheese, sugar, flour, lemon juice, lemon peel and vanilla, mixing at medium speed on electric mixer till well blended.
  3. Add in three Large eggs, one at a time, mixing well after each addition. Beat in egg white. Pour over crust. Bake at 325 F for 10 min. Reduce oven temperature to 250 F; continue baking for 30 min. Loosen cake from rim of pan; cold before removing rim of pan.
  4. Glaze: Combine sugar and cornstarch in saucepan; stir in water and lemon juice. Cook, stirring constantly, till clear and thickened. Add in small amount of warm mix to slightly beaten egg yolk. Return to warm mix, cook 3 min stirring constantly. Cold slightly. Spoon over cheesecake, chill.
