%E2%80%A6soooo%20yeah.%3C/p%3E%3Cp%3ESo,%20since%20shrimp%20and%20pasta%20are%20out,%20I%E2%80%99m%20always%20on%20the%20lookout%20for%20something%20other%20than%20your%20typical%20shrimp%20scampi%20to%20make%20them%20at%20home.%20I%20love%20them%20grilled%20%E2%80%93%20but%20that%E2%80%99s%20not%20a%20year-round%20thing%20here%20in%20these%20parts.%20So,%20saut%C3%A9ed/stir%20fried%20and%20over%20rice%20is%20the%20next%20best%20thing.%3C/p%3E%3Cp%3EThis%20sweet,%20spicy%20Andouille%20and%20Shrimp%20in%20Creole%20Mustard%20Sauce%20recipe%20is%20a%20refreshing%20change%20of%20pace.%20I%20love%20andouille.%20LOVE.%20Coarse%20ground,%20spicy,%20a%20nice%20snappy%20casing%20%E2%80%93%20it%20is%20the%20definition%20of%20sausage%20perfection.%20And%20since%20I%20hadn%E2%80%99t%20given%20in%20to%20my%20ever-nagging,%20constant%20craving%20for%20all%20things%20sausage%20in%20a%20while,%20I%20figured%20what%20the%20heck%20%E2%80%93%20let%E2%80%99s%20go%20crazy%20and%20go%20for%20andouille.%3C/p%3E%3Cp%3EThis%20is%20a%20really%20simple%20weeknight%20meal%20that%20tastes%20really%20impressive.%20I%20just%20loved%20all%20the%20flavors%20and%20textures%20going%20on%20throughout.%20Sweet%20and%20crunchy%20peppers%20and%20onions,%20snappy%20sausage,%20big%20juicy%20shrimp.%20Mmmm.%20And%20the%20sauce%20is%20so.freakin.good%20%E2%80%93%20silky%20smooth%20and%20flavorful%20with%20just%20the%20right%20amount%20of%20spice.%20The%20best%20part%20is%20it%20can%20be%20on%20the%20table%20in%2030!%20That%E2%80%99s%20my%20kind%20of%20dinner!%3C/p%3E%3Cp%3EA%20couple%20notes%20about%20the%20ingredients%20before%20I%20get%20to%20the%20recipe:%3C/p%3E%3Cp%3ECheck%20the%20heat%20level%20on%20your%20Cajun/Creole%20spice%20blend.%20I%20bought%20mine%20(a%20Cajun%20blend)%20from%20a%20little%20spice%20shop%20and%20wowee,%20does%20it%20have%20a%20kick!%20Smokin%E2%80%99!%20By%20comparison,%20blends%20I%E2%80%99ve%20bought%20at%20the%20regular%20grocery%20store%20are%20quite%20mild.%20If%20you%E2%80%99ve%20got%20a%20hot%20and%20spicy%20seasoning%20blend,%20you%20may%20want%20to%20cut%20the%20amount%20in%20half%20as%20the%20other%20ingredients%20will%20provide%20a%20spicy%20flavor%20as%20well.%20Don%E2%80%99t%20want%20it%20to%20be%20TOO%20spicy!%3C/p%3E%3Cp%3EI%20couldn%E2%80%99t%20find%20a%20Creole%20mustard%20to%20use%20in%20the%20sauce%20so%20I%20subbed%20in%20a%20sweet/hot%20mustard%20%E2%80%93%20it%E2%80%99s%20like%20a%20kicked%20up%20Dijon%20with%20a%20subtle%20honey%20sweetness%20behind%20it.%20You%20could%20probably%20sub%20all%20Dijon%20or%20a%20mixture%20of%20Dijon%20and%20honey%20if%20you%20have%20trouble%20finding%20this%20ingredient.%20Regular%20yellow%20mustard%20or%20honey%20mustard%20would%20probably%20work%20great%20as%20well,%20if%20the%20Dijon%20is%20too%20strong%20for%20your%20tastes.%20Substitutions%20are%20allowed%20and%20encouraged%20here.%20%20%20The%20full%20recipe%20calls%20for%205%20tablespoons,%20but%20since%20I%E2%80%99ve%20never%20had%20Creole%20mustard%20and%20can%E2%80%99t%20attest%20to%20its%20heat%20level,%20I%20opted%20to%20use%20about%20half%20that%20amount%20of%20the%20sweet/hot%20mustard.%20Again,%20I%20didn%E2%80%99t%20want%20to%20overpower%20the%20dish%20with%20a%20flavor%20that%E2%80%99s%20too%20strong.%20I%E2%80%99d%20start%20with%20less%20than%20five%20(two%20to%20two%20and%20half),%20taste%20the%20sauce%20and%20decide%20if%20it%20needs%20more.%20I%20thought%20it%20was%20perfect%20after%20the%20addition%20of%202.5%20tablespoons%20of%20mustard.%3C/p%3E%3Cp%3EIf%20you%20want%20to%20lighten%20it%20up%20a%20bit,%20you%20can%20easily%20cut%20back%20on%20the%20sausage.%20A%20pound%20is%20a%20lot%20%E2%80%93%20cut%20that%20amount%20it%20in%20half%20and%20chop%20the%20fat/calories%20without%20sacrificing%20the%20flavor.%20This%20is%20what%20I%20did%20and%20it%20worked%20out%20great!%3C/p%3E%3Cp%3EDIRECTIONS:%3C/p%3E%3Cp%3EToss%20shrimp%20with%20Creole%20seasoning%20in%20medium%20bowl%20to%20coat.%20Heat%201%20tablespoon%20oil%20in%20heavy%20large%20skillet%20over%20high%20heat.%20Add%20sausage%20pieces,%20cut%20side%20down.%20Cook%20until%20browned%20on%20both%20sides,%20about%205%20minutes.%20Transfer%20sausage%20to%20bowl.%20Add%20shrimp%20to%20skillet;%20cook%20until%20browned%20and%20just%20opaque%20in%20center,%20about%203%20minutes.%20Transfer%20to%20bowl%20with%20sausage.%20Add%20remaining%201%20tablespoon%20oil,%20onion,%20bell%20pepper,%20and%20thyme%20to%20skillet.%20Saut%C3%A9%20until%20vegetables%20are%20beginning%20to%20soften,%20about%205%20minutes.%20Add%20broth,%20mustard,%20and%20vinegar.%20Stir%20until%20sauce%20thickens,%20about%202%20minutes.%20Return%20sausage%20and%20shrimp%20to%20skillet.%20Simmer%20until%20heated%20through,%20stirring%20occasionally,%20about%201%20minute.%20Season%20with%20salt%20and%20pepper.%20Server%20over%20rice.%20Makes%204%20to%206%20servings.%3C/p%3E){kind=link}
