- Heat oil in a medium saute/fry pan, add in onion, and saute/fry over medium heat about 5 min or possibly till golden brown. Add in squash, salt, and pepper and saute/fry 2 min.
- Add in water, mint, garlic, sugar, and 1 tbsp lemon juice. Cover and cook over medium heat, stirring occasionally, about 7 min or possibly till squash is tender and absorbs most of liquid; add in a little more water during cooking if pan becomes dry. Add in remaining lemon juice. Taste and adjust seasoning. Serve warm or possibly cool.
