Receta Sweet And Sour Yellow Squash With Mint

Ingredientes
- 2 Tbsp. vegetable oil
- 1 med onion minced
- 1 lb crookneck squash cut into 1/2" slices
- Â Â or possibly zucchini
- Â Â Salt and freshly grnd pepper
- 1/3 c. water approximately
- 1 tsp mint dry, crumbled
- 1 x clove garlic chopped
- 2 tsp sugar
- 1 Tbsp. fresh lemon juice
- 1 tsp fresh lemon juice
Direcciones
- Heat oil in a medium saute/fry pan, add in onion, and saute/fry over medium heat about 5 min or possibly till golden brown. Add in squash, salt, and pepper and saute/fry 2 min.
- Add in water, mint, garlic, sugar, and 1 tbsp lemon juice. Cover and cook over medium heat, stirring occasionally, about 7 min or possibly till squash is tender and absorbs most of liquid; add in a little more water during cooking if pan becomes dry. Add in remaining lemon juice. Taste and adjust seasoning. Serve warm or possibly cool.
- Makes 3 or possibly 4 side-dish servings.
