Ingredientes

  • 3/4 c. strained blackberry puree
  • 1/4 c. water
  • 1/2 c. sugar
  • 1/2 Tbsp. maple syrup
  • 1 c. blue corn masa harina
  • 2 Tbsp. softened butter
  • 1 tsp fresh lemon juice
  • 8 x dry corn husks

Direcciones

  1. Bring water, sugar, molasses and puree to boil over medium high heat.
  2. Reduce heat, stir in masa harina. Simmer 10 min.
  3. Stir in remaining ingredients.
  4. Mix should roll into a ball without sticking to your fingers.
  5. Spread onto softened husks (soften dry husks in water) proportionately (not as easy as it sounds). Leave a "rolling margin" at each side.
  6. Set filling of your choice in a line through middle of dough.
  7. Mix in both sides and press seam together. Leave ends open.
  8. Roll husk and tie ends tightly.
  9. Steam 45 min to 1 1/2 hrs depending on thickness. Ideally, tamales will slide out of husk and have a spongy texture to the dough.
