%20autumn%20days,%20today%20has%20been%20grey%20and%20pretty%20cold.%20The%20perfect%20kind%20of%20day%20for%20soup%20to%20warm%20the%20cockles%20of%20my%20heart.%3C/p%3E%3Cp%3EI'm%20on%20an%20economy%20drive,%20which%20means%20making%20a%20meal%20plan%20for%20the%20week%20on%20Sundays%20and%20doing%20one%20big%20shop%20on%20Mondays,%20rather%20than%20loads%20of%20little%20daily%20shops%20which%20end%20up%20being%20expensive.%20So%20I%20sat%20down%20and%20flicked%20through%20some%20cookbooks%20for%20inspiration.%20Making%20meal%20plans%20also%20seems%20as%20good%20a%20reason%20as%20any%20to%20get%20back%20to%20cooking%20new%20recipes%20again%20and%20hopefully%20as%20a%20result%20getting%20back%20to%20weekly%20blogging.%3C/p%3E%3Cp%3EOn%20a%20summer%20holiday%20to%20Ireland%20a%20few%20years%20ago%20I%20was%20impressed%20by%20the%20food%20in%20the%20Avoca%20cafes%20and%20bought%20two%20of%20their%20cookbooks,%20one%20on%20baking%20and%20for%20soup.%20That's%20where%20I%20saw%20this%20recipe%20for%20Sweet%20Potato%20and%20Lentil%20Soup,%20full%20of%20goodness%20and%20warm%20spices%20and%20thick%20enough%20to%20be%20suitably%20substantial%20for%20dinner%20(I%20guess%20you%20could%20call%20it%20stoup).%20I%20added%20a%20little%20brown%20sugar%20to%20cut%20through%20the%20acidity%20of%20the%20tomtaoes%20and%20a%20few%20chilli%20flakes%20for%20a%20little%20extra%20heat,%20but%20below%20is%20the%20original%20recipe.%3C/p%3E%3Cp%3EP.S.:%20When%20I%20reheated%20the%20left-overs%20for%20lunch%20today,%20they%20had%20thickened%3C/p%3E%3Cp%3Eeven%20more%20and%20reminded%20me%20of%20a%20dhal.%20I%20added%20some%20curry%20powder%20and%3C/p%3E%3Cp%3Eit%20made%20it%20even%20better,%20so%20I'd%20probably%20do%20that%20straight%20away%20next%20time.%3C/p%3E%3Cp%3EIn%20a%20large%20saucepan,%20heat%20the%20butter%20and%20oil%20over%20medium%20heat.%3C/p%3E%3Cp%3EAdd%20the%20onion%20and%20fry%20without%20colouring%20for%20about%2010%20mins%20till%20soft%20and%20transluscent.%3C/p%3E%3Cp%3EAdd%20the%20sweet%20potato,%20carrot,%20celery%20and%20lentils%20and%20stirr%20to%20coat%20in%20oil.%3C/p%3E%3Cp%3EAdd%20the%20spices,%20ginger%20and%20garlic%20and%20cook%20for%202-3%20minutes%20stirring%20occassionally.%3C/p%3E%3Cp%3EAdd%20the%20tomatoes%20and%20the%20stock.%3C/p%3E%3Cp%3ESeason%20with%20lemon%20juice,%20salt%20and%20pepper%20and%20cook%20for%20about%2030%20minutes%20until%20the%20potatoes%20and%20the%20lentils%20are%20soft%20and%20tender.%3C/p%3E%3Cp%3EUsing%20a%20stick%20blender%20,%20puree%20briefly,%20so%20everything%20is%20still%20chunky%20rather%20than%20smooth.%3C/p%3E%3Cp%3ECheck%20the%20seasoning,%20reheat%20and%20serve.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E){kind=link}
