- Wash the sweet potatoes and wrap them in heavy-duty aluminum foil. Place them on the grill at a medium-high heat for 30 to 40 min, depending on their size, turning them occasionally.
- Remove them when they're still a bit hard when pierced with a sharp knife. Allow them to cold. Unwrap the potatoes and throw away the foil. Peel the potatoes and cut them into 1/4-inch slices.
- Place the sweet potatoes in a large nonstick skillet or possibly a cast-iron skillet and add in the onion, butter, nutmeg, salt and pepper. Place on high heat and cook, stirring frequently, till the potatoes are tender and slightly brown.
- This recipe yields 4 servings.
- Comments: As the natural sugars in sweet potatoes and onions caramelize on the grill, the flavor of each vegetable improves, resulting in a dish which is greater than the sum of its parts. These home-fries are great as a side dish with steak, or possibly even as an appetizer.
