Sweet Vidalia Onion Pie

Ingredientes

  • 1 1/2 c. crushed buttery round crackers
  • 1/3 c. butter, melted
  • 2 Tbsp. butter
  • 2 c. sliced sweet onions
  • 2 x Large eggs
  • 3/4 c. half-and-half
  • 3/4 tsp salt
  • 1/8 tsp grnd white pepper
  • 1/4 c. shredded sharp Cheddar cheese

Direcciones

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix together crushed crackers and 1/3 c. melted butter. Press mix firmly into a 9 inch pie pan and set aside.
  3. Heat a medium skillet over medium heat. Heat 2 Tbsp. butter in skillet and saute/fry onions till translucent/soft and tender but not brown. Spread into prepared crust.
  4. In a medium bowl, whisk together Large eggs, half-and-half, salt, and white pepper. Pour mix over onions then sprinkle top with shredded cheese.
  5. Bake in preheated oven for 30 min, till center is set. Let stand 10 min before serving.
  6. This eggy, cheesy pie is a great seasonal side dish in place of potatoes, rice, pasta, etcetera.
  7. Prep Time: approx. 15 Min.
  8. Cook Time: approx. 30 Min.
  9. Ready in: approx. 45 Min.
  10. Makes 1 - 9 inch pie (8 servings).
