%20to%20mixing%20them%20into%20pasta%20salad%20or,%20my%20current%20favorite,%20slipping%20them%20into%20a%20frittata.%20That%20frittata%20is%20currently%20coming%20up%20against%20some%20tough%20competition%20as%20reigning%20favorite,%20namely%20this%20lima-less%20version%20of%20succotash.%3C/p%3E%3Cp%3EI%20probably%20sound%20like%20a%20broken%20record%20at%20this%20point,%20but%20I'm%20so%20proud%20of%20myself%20and%20my%20man%20for%20taking%20this%20garden%20project%20all%20the%20way%20to%20fruition.%20It's%20often%20been%20a%20frustrating%20struggle%20and%20downright%20hard%20at%20times,%20and%20if%20nothing%20else,%20I%20have%20a%20new%20and%20huge%20appreciation%20for%20the%20people%20who%20do%20this%20for%20a%20living%20(and%20also%20for%20my%20grandparents,%20who%20STILL%20garden,%20even%20in%20their%2090s!).%20This%20is%20another%20dish%20composed%20primarily%20of%20ingredients%20we%20grew%20ourselves,%20and%20that%20seems%20to%20make%20it%20taste%20extra%20good.%3C/p%3E%3Cp%3EThough%20we%20have%20lots%20of%20yellow%20pear%20tomatoes%20too,%20I%20used%20the%20little%20red%20sweeties%20in%20this%20dish--they're%20juicy%20and%20delicious!%20The%20cucumber,%20pepper,%20and%20basil%20came%20from%20the%20garden%20too.%20We're%20not-so-patiently%20waiting%20for%20the%20corn%20to%20mature,%20and%20then%20this%20can%20be%20a%20completely%20homegrown%20dish.%20As%20usual,%20adjust%20the%20proportions%20and%20seasonings%20to%20your%20tastes,%20but%20above%20all%20else,%20make%20this%20perfect%20summer%20side!%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPlace%20the%20corn,%20tomatoes,%20cucumber,%20pepper%20and%20sliced%20basil%20in%20a%20large%20bowl.%3C/p%3E%3Cp%3ESprinkle%20with%20cumin,%20pepper,%20salt%20and%20sugar,%20and%20squeeze%20a%20lime%20over%20the%20top.%20Stir%20until%20everything%20is%20evenly%20coated.%3C/p%3E%3Cp%3ERefrigerate%20for%20an%20hour%20or%20so%20to%20let%20everything%20mingle.%3C/p%3E%3Cp%3EWhen%20ready%20to%20serve,%20top%20with%20cheese%20and%20a%20splash%20of%20balsamic%20vinegar.%3C/p%3E){kind=link}
