Ingredientes

  • 2 lb boneless pork loin
  • 1/2 c. soy sauce
  • 1/4 c. dark beer
  • 2 Tbsp. dark molasses
  • 2 tsp lemon zest
  • 2 tsp orange zest
  • 1 Tbsp. finely-minced fresh thyme
  • 2 Tbsp. freshly-grated ginger
  • 2 x garlic cloves peeled, minced fine
  • 2 Tbsp. light brown sugar
  • 1/2 tsp cracked black pepper
  • 1 Tbsp. kosher salt
  • 1/2 tsp cayenne pepper
  • 4 x sweet potatoes peeled, and
  •     cut into 1" pcs
  • 1 x Granny Smith apple peeled, cored,
  •     and finely diced
  • 1/2 c. heavy whipping cream
  • 1/4 c. butter
  • 2 tsp brown sugar
  • 1 Tbsp. maple syrup
  • 1 tsp kosher salt
  • 1/2 tsp freshly-grnd black pepper

Direcciones

  1. In a small bowl or possibly glass measure combine all the marinade ingredients. Place the pork loin in a baking dish, cover with the marinade and chill 24 hrs.
  2. Preheat the oven to 400 degrees. Remove the pork loin from the marinade, place in a baking dish. Place in the oven, cover and cook for 1 hour or possibly till cooked to medium.
  3. Meanwhile, in a large pot place the sweet potato pcs, cover with water and bring to a boil. Cook till tender, about 15 min.
  4. In a saucepan combine the apple, heavy cream, butter, brown sugar and maple syrup. Bring to a simmer.
  5. Drain the potatoes and transfer to a mixer and whip with whisk. Gradually add in the apple/cream mix and whip till smooth. Add in the salt and pepper to taste.
  6. To Serve: Remove the pork from the oven and let stand a few min before slicing. Slice the pork loin and serve with the whipped sweet potatoes.
