Taco Salad Bowl with a Cilantro Lime Dressing
The other day, when I arrived home from work, and after my walk, I didn’t know what I should throw together for dinner. I had some ground beef in the fridge and some green leaf lettuce from the farmer’s market so I figured why not make a Taco Salad Bowl with a Cilantro Lime dressing.
I created a bowl out the leafy greens.
Taco Salad Bowl with a Cilantro Lime Dressing
- 2 Tablespoons of dressing per person

- Ingredients
- 16 ounces 93/7 ground beef
- Taco seasoning
- 1 cup black beans
- 4 ounce reduced fat Mexican blend shredded cheese
- 1 head green leaf lettuce
- ¼ cup cilantro, chopped
- 1 teaspoon garlic powder
- ½ cup Plain Greek Yogurt (I used Fage)
Directions
In a skillet on medium high eat, brown the beef, add the taco seasoning and ½ cup water, Simmer on low until the water is absorbed.
In your blender, add the yogurt, cilantro leafs, lime juice and garlic powder and blend until nice and smooth. Set aside
take a shallow bowl and place green leaf lettuce around the bowl.
In a separate bowl, chop up the rest of the lettuce, add the beans, and 1 ounce of low-fat shredded Mexican blend cheese.
Pour the dressing and add it to the bowl and toss real well.
Divide among your salad bowls.
Top with the ground beef mixture.

It was perfect. Fun to make. Delicious and easy. The dressing had a great zip to it. I bet it would make a great dip with fresh veggies too.
I could have added lots of other great veggies to this dish. How about roasted corn, or chopped avocado, thinly sliced red onions, pico de gallo. But don’t stop there. Make what you love in your salad.
