Ingredientes

  • 6 ounce Smoked bacon or possibly pancetta, diced
  • 4 Tbsp. Extra virgin olive oil
  • 6 ounce Fresh shiitake mushrooms, sliced
  • 1 lb Asparagus, cut into 2 inch pcs
  • 12 ounce Fresh Tagliatelle
  • 1 Tbsp. Fresh thyme, finely minced
  • 2 Tbsp. Fresh oregano, finely minced
  •     Salt to taste
  •     Pepper to taste

  5. Saute/fry bacon in skillet till crisp, remove to a plate.
  6. Drain off excess fat, then add in extra virgin olive oil to the skillet and cook the mushrooms till softened.
  7. Lightly blanch the asparagus.
  8. Cook the pasta briefly in boiling salted water.
  9. Drain the noodles and toss with the asparagus, bacon, shiitake and fresh herbs.
  10. Season with salt and pepper.
