%20and%20the%20pic's%20have%20sat%20deep-deep%20in%20archives%20(ie.%20not%20even%20on%20my%20computer),%20waiting%20to%20see%20the%20light%20of%20day.%20It%20was%20actually%20the%20most%20sunniest%20of%20days%20when%20I%20made%20this%20fresh%20condiment.%20My%20girl%20and%20I%20attended%20the%20Portarlington%20Mussel%20Festival%20and%20bought%20lots%20of%20mussels%20for%20$4.00%20a%20kilo!%20I%20had%20my%20mind%20set%20on%20making%20linguine%20with%20mussels,%20leeks,%20white%20wine%20and%20other%20yummy%20things%20like%20butter.%20I%20also%20envisioned%20a%20small%20bowl%20on%20the%20table,%20full%20of%20freshly%20made%20tomato%20and%20chilli%20jam.%20I'd%20seen%20variations%20of%20tomato/chilli%20jam%20recipes%20in%20blogs%20and%20food%20magazines,%20but%20the%20most%20appealing%20recipe%20for%20me%20was%20inspired%20by%20%22delicious.%22%20magazine's%20Valli%20Little%20-%20as%20seen%20on%20Lorraine's%20blog%20at%20Not%20Quite%20Nigella%20(creamery-cream%20of%20the%20food%20blog%20world).%20I've%20changed%20the%20title%20of%20the%20original%20recipe%20a%20little%20and%20the%20actual%20recipe%20ever-so-slightly..%20just%20to%20suit%20my%20own%20tastes..%20but%20I%20can't%20deny%20it's%20a%20blessing%20to%20be%20inspired%20by%20talented%20foodies%20out%20there.%20What%20appealed%20to%20both%20Lorraine%20and%20I%20about%20Valli's%20recipe%20was%20the%20fact%20that%20it%20uses%20a%20tin%20of%20tomatoes.%20Too%20easy!%20The%20recipe%20yields%20about%20a%20cup%20of%20jam%20and%20keeps%20in%20the%20fridge%20for%20two%20weeks%20ie.%20no%20mass%20production%20and%20jars%20overtaking%20your%20fridge.%20Unless%20of%20course%20you%20want%20to%20make%20some%20for%20friends/loved%20one's.%3C/p%3E%3Cp%3EHubby%20and%20I%20enjoyed%20this%20tomato%20jam%20straight%20from%20the%20stove%20top%20(cooled%20to%20room%20temperature%20however)..%20dolloped%20onto%20the%20side%20of%20our%20plates%20with%20mussel%20linguine.%20You%20could%20of%20course%20use%20it%20to%20accompany%20vegie%20burgers/patties..%20any%20kind%20of%20burger%20or%20even%20a%20sausage%20sizzle.%20Serve%20with%20hot%20or%20cold%20cooked%20meats%20in%20general..%20or%20on%20top%20of%20cheese%20and%20toast..%20the%20sky%20is%20the%20limit!%20Adjust%20the%20chilli%20factor%20according%20to%20your%20tastes%20too.%3C/p%3E%3Cp%3ETake-a-can%20'Tomato%20&%20Chilli%20Jam'%3C/p%3E%3Cp%3E-Cook%20onion%20in%20oil%20for%20a%20couple%20of%20minutes,%20add%20ginger,%20cook%20another%20couple%20of%20minutes%20until%20onion%20is%20soft.%3C/p%3E%3Cp%3E-Add%20chilli,%20brown%20sugar%20and%20red%20wine%20vinegar.%20Cook%20another%202%20to%203%20minutes%20until%20sugar%20dissolves.%3C/p%3E%3Cp%3E-Add%20tomatoes,%20stir%20and%20season%20with%20salt%3C/p%3E%3Cp%3E-Bring%20mixture%20to%20a%20boil,%20reduce%20heat%20and%20simmer%20for%20approximately%2030%20minutes%20minimum(stirring%20now%20and%20again).%20I've%20followed%20Lorraine's%20tip%20of%20keeping%20the%20lid%20off%20to%20allow%20for%20some%20evaporation.%20You'll%20get%20a%20strong%20smell%20of%20vinegar%20in%20the%20house%20and%20possibly%20some%20splatters.%20Open%20a%20window%20&%20turn%20your%20vents%20on!%20Keep%20the%20heat%20low%20as%20it%20simmers..%20until%20the%20jam%20is%20thick.%20Mine%20took%20about%2050%20minutes%20total%20on%20the%20stove.%3C/p%3E%3Cp%3E-Take%20off%20heat,%20stir%20through%20caster%20sugar,%20allow%20to%20cool%20to%20room%20temperature%20before%20serving.%3C/p%3E%3Cp%3E-Jam%20keeps%20in%20the%20fridge%20(covered)%20up%20to%202%20weeks.%3C/p%3E%3Cp%3ECandles%20courtesy%20from%20my%20friend%20Tiffany%20(a%20Christmas%20gift)...%3C/p%3E%3Cp%3ELinguine%20with%20leeks,%20white%20wine%20&%20mussels%20from%20the%20Portarlington%20Mussel%20Festival.%20Might%20seem%20strange,%20but%20the%20Tomato%20&%20Chilli%20jam%20was%20great%20dolloped%20alongside%20this%20meal!%3C/p%3E){kind=link}
