,%20sometimes%20I%20just%20get%20cranky%20for%20time%20IN%20the%20actual%20kitchen.%3C/p%3E%3Cp%3ECrepes.%20%20I%20don%E2%80%99t%20know%20why,%20but%20I%20started%20daydreaming%20about%20crepes.%20%20Filled%20with%20eggs%20and%20goat%20cheese%20and%20something%20bright%20colored%20to%20remind%20me%20what%20spring%20looked%20like.%20%20Luckily%20I%20was%20only%20a%20few%20blocks%20from%20Whole%20Foods,%20where%20a%20bunch%20of%20gorgeous%20little%20tomatoes%20from%20Mexico%20found%20their%20way%20into%20my%20basket,%20along%20with%20some%20fresh%20cilantro%20and%20small%20Mexican%20champagne%20mangoes.%20%20The%20sun%20was%20out,%20the%20air%20was%20warm,%20I%20walked%20home%20with%20my%20jacket%20unbuttoned%20and%20my%20raggedy%20hair%20blowing%20in%20the%20wind.%20%20New%20Yorkers%20had%20a%20bit%20more%20of%20a%20spring%20to%20their%20step,%20and%20I%20didn%E2%80%99t%20realize%20at%20the%20time%20how%20this%20quick%20break%20from%20the%20cold%20would%20make%20smiles%20turn%20up%20a%20bit%20more%20on%20most%20of%20the%20lovely%20people%20I%E2%80%99d%20encounter%20in%20my%20day.%3C/p%3E%3Cp%3EAnyway,%20back%20in%20the%20kitchen.%20%20I%20had%20decided%20on%20using%20a%20little%20buckwheat%20%E2%80%93%20which%20is%20common%20in%20some%20crepe%20recipes%20but%20used%20sparingly%20as%20it%20can%20be%20a%20bit%20bitter%20%E2%80%93%20and%20tapioca%20flour%20to%20pull%20along%20with%20the%20eggs%20and%20soymilk%20I%20was%20using%20for%20the%20crepe%20batter.%20%20A%20tiny%20bit%20of%20butter%20and%20salt,%20and%20that%E2%80%99s%20it!%20%20I%20utilized%20the%20whipping%20strength%20of%20a%20blender%20and%20the%20ease%20of%20a%20non-stick%20skillet%20to%20aid%20in%20making%20sure%20that%20the%20eggs%20would%20be%20beaten%20light%20and%20fluffy%20and%20the%20crepes%20easy%20to%20flip.%20%20When%20the%20first%20one%20actually%20WORKED%20I%20called%20my%20boyfriend%20to%20the%20stove,%20giddy%20like%20a%20school-child%20out%20the%20first%20day%20of%20holiday.%20%20We%20delighted%20in%20a%20few%20seconds%20of%20cheery%20contentment,%20flipping%20gluten-and-dairy-free%20crepes%20onto%20a%20waiting%20pan%20while%20eggs%20slow-cooked%20nearby.%3C/p%3E%3Cp%3EThis%20recipe%20is%20quite%20simple,%20and%20quick,%20and%20with%20a%20little%20practice%20I%20soon%20had%20a%20stack%20of%20warm%20crepes%20that%20I%20filled%20with%20sauteed%20eggs%20and%20served%20with%20a%20guacamole-type%20mix%20and%20the%20freshly%20sliced%20champagne%20mangoes.%3C/p%3E%3Cp%3EIt%20was%20a%20good,%20good,%20good%20day.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EWhip%20eggs%20and%20milk%20of%20choice%20in%20blender%20until%20creamy%20and%20a%20bit%20fluffy%20(if%20you%20don%E2%80%99t%20have%20a%20blender%20you%20can%20use%20a%20standing%20or%20hand%20mixer,%20or%20just%20whip%20the%20heck%20out%20of%20them%20with%20a%20whisk).%20%20Add%20the%20flours%201/3%20a%20cup%20at%20a%20time,%20whipping%20thoroughly%20with%20each%20addition.%20%20Add%20the%20melted%20butter%20or%20oil%20and%20salt%20and%20whip%20quickly%20to%20incorporate.%3C/p%3E%3Cp%3EHeat%20a%20large%20non-stick%20skillet%20on%20medium%20high%20heat%20and%20spray%20lightly%20with%20cooking%20spray.%20%20Hold%20skillet%20away%20from%20heat%20and%20let%20cool%20for%205%20seconds,%20then%20pour%20enough%20batter%20in%20the%20center%20of%20the%20skillet,%20swirling%20quickly%20to%20cover%20the%20entire%20surface,%20until%20the%20bottom%20of%20the%20skillet%20is%20just%20covered%20with%20batter.%20%20Return%20to%20heat%20and%20cook%20for%2015-20%20seconds%20or%20until%20the%20sides%20of%20the%20crepe%20start%20to%20curl.%20%20Flip%20gently%20and%20cook%20on%20the%20other%20side%20another%2020%20seconds.%20%20Remove%20to%20plate.%20%20Repeat%20until%20you%20get%20a%20pretty%20stack%20of%20crepes!%3C/p%3E%3Cp%3EBefore%20I%20started%20cooking%20the%20crepes%20I%20had%20a%20second%20skillet%20going%20on%20low%20heat%20with%20melted%20butter,%20slowly%20stirred%20eggs,%20fresh%20cilantro,%20soft%20goat%20cheese%20and%20the%20skins%20of%20these%20tomatoes:%3C/p%3E%3Cp%3EI%20then%20reserved%20the%20insides%20of%20them%20and%20mashed%20them%20with%20avocado,%20more%20cilantro,%20a%20squirt%20of%20fresh%20lemon%20juice%20(in%20the%20absence%20of%20lime)%20and%20some%20sea%20salt%20and%20pepper.%20%20And%20then%20adorned%20the%20dish%20with%20the%20fresh%20champagne%20mangoes.%20%20They%E2%80%99re%20a%20little%20tarter,%20firmer%20and%20less%20fibrous%20than%20regular%20mangoes.%3C/p%3E%3Cp%3EWhile%20the%20tomatoes%20weren%E2%80%99t%20quite%20what%20I%20wanted%20(beautiful%20in%20color%20but%20still%20lacking%20that%20perfect%20summer%20tomato%20sweetness),%20it%20was%20a%20gorgeous%20dish,%20paired%20with%20orange%20juice%20and%20locally%20roasted%20coffee.%20%20The%20perfect%20start%20to%20one%20of%20the%20best%20Sundays%20I%E2%80%99ve%20had%20in%20a%20long%20while.%3C/p%3E%3Cp%3ECreamy%20egg-filled%20crepes%20with%20champagne%20mangoes,%20avocado%20and%20Mexican%20tomatoes%3C/p%
