Receta "Tapioca" Pudding
MMMmmmm! This is such a comfort food for me! Quick and easy, creamy and satisfying...and super nutritious! Remember those cute little "Chia Pets sold on TV as little clay animals, sprouting cute green "fur" plants? Well, this is the exact same thing, minus the clay animal. This high energy, endurance food is recorded as far back as the ancient Aztecs.
Note: the pudding is actually thicker than is looks. I took the picture before it totally set.
"Tapioca" Pudding
- 1 cup cashews (soaked 2 hours)
- 1/2 cup young coconut meat (or 1/2 cup macadamia nuts)
- 2 1/2 cups water (preferably use coconut water and water combo)
- 1/4 cup honey (or sweetener of choice)
- 1/4 cup Irish moss paste (optional)
- 5 drops Medicine Flower Vanilla Extract (or 1 1/2 tsp vanilla extract)
- 1 tsp lucuma powder
- pinch sea salt
- pinch cardamom (very small pinch)
- pinch cinnamon
- 1/4 cup chia seeds (add more as needed to thicken, especially if not using Irish Moss Paste)
Blend nuts and water well.
Add remaining ingredients except chia seeds and cinnamon, and blend until creamy.
Transfer to a mixing bowl. Add chia seeds, mix and refrigerate for several hours.
To Serve: transfer to individual serving bowls, sprinkle with cinnamon and serve. (Top with your favorite whipped cream recipe).
