,%20and%20I%20get%20to%20eat%20rajas%20con%20queso%20(melty%20cheese%20over%20grilled%20onions%20and%20peppers)%20and%20pico%20de%20gallo%20(both%20of%20which%20she%20doesn%E2%80%99t%20eat,%20because:%20onions).%3C/p%3E%3Cp%3EBut%20really%20the%20salsas%20rank%20right%20up%20there%20for%20THE%20reason%20to%20go%20out%20for%20Mexican%20food.%20If%20it%20weren%E2%80%99t%20for%20those%20tempting%20salad-bar-style%20salsa%20bars%20with%20their%20rainbow%20of%20assorted%20roasted,%20charred,%20blended,%20spicy,%20medium,%20mild,%20red,%20green,%20smoky,%20tangy,%20fresh-diced%20salsas,%20then%20we%20could%20just%20make%20ourselves%20the%20same%20Mexican%20dishes%20at%20home!%3C/p%3E%3Cp%3EIn%20fact,%20sometimes%20Paula%20gets%20a%20take-out%20burrito%20from%20a%20lunch%20place%20near%20her%20work%20just%20so%20she%20can%20snag%20a%20few%20extra%20little%20plastic%20containers%20of%20taco-shop%20salsa,%20which%20we%20then%20use%20to%20drench%20our%20homemade%20frozen%20tamales%20at%20dinner%20time.%3C/p%3E%3Cp%3EWe%20agree%20on%20two%20favorites%20%E2%80%94%20a%20liquidy%20red%20salsa%20that%E2%80%99s%20spicy,%20peppery,%20and%20so%20brightly%20colored%20it%E2%80%99s%20almost%20orange%20(perfect%20on%20tamales),%20and%20this%20one:%20a%20thicker,%20creamy,%20fruity,%20tomatillo-based%20avocado%20salsa%20verde%20with%20just%20a%20little%20hint%20of%20spice.%20(Perfect%20on%20tacos,%20with%20chips,%20and%20%E2%80%94%20when%20the%20chips%20have%20all%20disappeared%20%E2%80%94%20I%20like%20to%20eat%20it%20with%20a%20spoon.)%3C/p%3E%3Cp%3EPaula%20judges%20Mexican%20restaurants%20by%20their%20pre-meal%20chips-and-salsa%20offerings.%3C/p%3E%3Cp%3EWhen%20she%20first%20moved%20up%20to%20Santa%20Barbara%20from%20the%20San%20Fernando%20valley,%20she%20avoided%20the%20Mexican%20restaurants%20here%20(for%20over%20a%20year,%20until%20she%20met%20me!),%20thinking%20that%20they%20wouldn%E2%80%99t%20be%20quite%20as%20good.%20And%20she%20was%20probably%20right.%3C/p%3E%3Cp%3ECan%20you%20imagine%20that?%20A%20move%2090%20miles%20north%20from%20Southern%20California%20to%20the%20Central%20Coast,%20and%20you%20get%20a%20noticeable%20drop%20in%20taco%20quality.%20I%20don%E2%80%99t%20think%20Southern%20California%20natives%20fully%20appreciate%20how%20much%20MORE%20the%20taco%20quality%20can%20drop%20once%20you%20get,%20say,%202,000%20miles%20away%20from%20either%20Mexico%20or%20California%20(e.g.,%20Wisconsin).%3C/p%3E%3Cp%3EDespite%20her%20doubts,%20we%E2%80%99ve%20gradually%20amassed%20a%20collection%20of%20favorite%20taquer%C3%ADas%20in%20town.%20Places%20where%20the%20salsas%20pass%20muster.%3C/p%3E%3Cp%3EAnd%20the%20best%20ones%20offer%20a%20salad%20bar%20array%20of%20salsas%20with%20mini%20plastic%20molcajetes%20or%20plastic%20cups.%20If%20you%20bring%20a%20group%20of%20friends%20along,%20then%20you%20can%20feel%20a%20little%20more%20justified%20and%20a%20little%20less%20greedy%20in%20scooping%20up%20at%20least%20a%20sample%20of%20each%20to%20bring%20back%20to%20your%20table%20to%20try.%3C/p%3E%3Cp%3ENot%20too%20hardcore%20haba%C3%B1ero-level%20spicy,%20this%20type%20of%20tomatillo-based%20creamy%20avocado%20salsa%20is%20usually%20a%20crowd%20favorite.%20And%20like%20I%20said,%20I%20CANNOT%20BELIEVE%20we%20had%20never%20tried%20making%20it%20before.%3C/p%3E%3Cp%3EFor%20one%20thing,%20it%E2%80%99s%20really%20not%20all%20that%20different%20from%20Paula%E2%80%99s%20go-to%20roasted%20tomatillo%20salsa.%20It%20just%20has%20fewer%20tomatillos,%20serrano%20instead%20of%20jalape%C3%B1o,%20and%20a%20ripe%20avocado%20for%20some%20extra%20creamy%20greenness.%3C/p%3E%3Cp%3EAnd%20compared%20to%20almost%20everything%20else%20on%20our%20long,%20dreamy%20list%20of%20%E2%80%9Csalsas%20to%20make,%E2%80%9D%20it%E2%80%99s%20a%20very%20simple%20recipe.%20There%E2%80%99s%20no%20frying%20or%20soaking%20of%20dried%20chili%20peppers,%20no%20charring%20of%20tomatoes%20(just%20some%20hands-off%20oven%20roasting),%20and%20no%20meticulous%20grinding%20by%20hand%20%E2%80%94%20this%20recipe%20works%20beautifully%20in%20the%20blender.%3C/p%3E%3Cp%3EWe%20whipped%20it%20up%20this%20weekend%20and%20I%20swooned%20over%20the%20first%20bite.%20And%20(after%20we%20got%20mad%20at%20ourselves%20for%20not%20trying%20it%20sooner)%20this%20recipe%20became%20an%20instant%20favorite.%3C/p%3E%3Cp%3EOne%20more%20salsa%20recipe%20down,%20many,%20many%20more%20to%20go.%3C/p%3E%3Cp%3ERECIPE:%3C/p%3E%3Cp%3ETaquer%C3%ADa-Style%20Creamy%20Avocado%20Salsa%3C/p%3E%3Cp%3E(Makes%20about%203%20cups)%3C/p%3E%3Cp%3EActive%20time:%2015%20minutes;%20Total%20time:%2035%20minutes.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ESpecial%20equipment%20needed:%3C/p%3E%3Cp%3E~%20blender%20or%20food%20processor%3C/p%3E%3Cp%3EHow%20to%20make%20it:%3C/p%3E%3Cp%3E1.%20Pre-heat%20the%20oven%20to%20350%20degrees.%20Line%20a%20baking%20sheet%20with%20parchment%20paper.%20Remove%20the%20husks%20of%20the%20tomatillos%20and%20rinse%20under%20cold%20water,%20rubbing%20them%20gently%20with%20your%20fingers%20to%20r
