%20is%20the%20pioneer%20of%20the%20%E2%80%9Cslow%20food%20movement,%E2%80%9D%20which%20celebrates%20local,%20sustainable,%20fresh,%20and%20seasonal%20produce%20of%20the%20best%20quality.%20If%20you%20can%E2%80%99t%20make%20it%20out%20to%20Berkeley,%20California%20to%20eat%20at%20her%20restaurant,%20you%20should%20at%20least%20treat%20yourself%20to%20one%20of%20her%20cookbooks.%20It%E2%80%99s%20because%20of%20her%20that%20we%20pay%20attention%20to%20the%20little%20signs%20at%20our%20grocery%20store%20that%20tell%20us%20where%20our%20produce%20comes%20from.%3C/p%3E%3Cp%3EWe%20used%20Alice%E2%80%99s%20method%20for%20fresh-pickled%20vegetables,%20but%20added%20a%20generous%20amount%20of%20sliced%20jalape%C3%B1os,%20as%20well%20as%20whole%20cumin%20seeds%20and%20coriander%20seeds%20to%20make%20them%20more%20%E2%80%9Ctaqueria-style%E2%80%9D.%20We%20also%20decided%20to%20can%20them%20so%20they%E2%80%99d%20last%20longer.%20Our%20taqueria%20doesn%E2%80%99t%20add%20cauliflower%20to%20theirs,%20but%20we%20thought%20it%20would%20be%20delicious%20%E2%80%93%20it%20was!%20(And%20since%20it%E2%80%99s%20in%20season,%20Alice%20would%20approve).%3C/p%3E%3Cp%3EI%20also%20want%20to%20dedicate%20this%20post%20to%20Dustin%E2%80%99s%20grandma,%20who%20taught%20us%20the%20canning%20process.%20We%20love%20you%20and%20want%20you%20to%20know%20we%E2%80%99ll%20continue%20the%20annual%20canning%20tradition%20of%20making%20your%20bread%20&%20butter%20pickles,%20chile%20sauce,%20and%20strawberry%20jam!%20%3C3%3C/p%3E%3Cp%3EWash,%20trim,%20and%20cut%20your%20vegetables.%3C/p%3E%3Cp%3EFor%20about%203%201/2%20cups%20pickling%20brine*,%20combine%201/2%20cup%20apple%20cider%20vinegar,%201%20cup%20distilled%20white%20vinegar,%201%203/4%20cup%20water,%202%201/2%20TBS.%20sugar,%201/2%20a%20bay%20leaf,%201/2%20tsp.%20coriander%20seeds,%201/2%20tsp.%20cumin%20seeds,%20pinch%20of%20dried%20oregano,%202%20whole%20garlic%20cloves,%202%20peeled%20and%20halved%20garlic%20cloves,%20and%20a%20pinch%20of%20salt.%3C/p%3E%3Cp%3EBring%20brine%20to%20a%20boil,%20then%20add%20the%20vegetables%20in%20the%20order%20of%20their%20cooking%20time,%20beginning%20with%20the%20vegetable%20which%20will%20take%20the%20longest.%20Add%20the%20carrots%20first%20and%20cook%20them%20until%20they%20are%20cooked%20through%20but%20%20still%20a%20little%20bit%20crisp%20(simply%20scoop%20one%20out%20to%20test%20%E2%80%93%20about%2020%20minutes).%20When%20you%20think%20the%20carrots%20have%20about%2010%20minutes%20left%20to%20cook,%20add%20the%20jalape%C3%B1os.%20Add%20the%20sliced%20onion%20and%20the%20cauliflower%20florets%20when%20you%20think%20the%20carrots%20are%20almost%20done%20%E2%80%93%20they%20will%20take%20only%20a%20few%20minutes.%3C/p%3E%3Cp%3EIf%20you%20want%20to%20can%20the%20pickles%20%E2%80%93%20transfer%20the%20hot%20vegetables%20into%20mason%20jars,%20and%20fill%20the%20tops%20of%20the%20jars%20with%20brine.%20Screw%20the%20lids%20on%20the%20jars%20and%20process%20in%20a%20hot%20water%20bath%20for%2010%20minutes.%20Remove%20from%20water%20and%20let%20them%20sit%20on%20the%20counter%20until%20you%20hear%20them%20%E2%80%9Cpop!%E2%80%9D%20Then%20you%E2%80%99ll%20know%20they%E2%80%99re%20canned!%20Once%20opened,%20they%E2%80%99ll%20keep%20for%20a%20couple%20months%20in%20the%20refrigerator.%3C/p%3E%3Cp%3EFor%20refrigerator%20pickles,%20allow%20the%20vegetables%20to%20cool%20completely%20after%20being%20removed%20from%20the%20brine.%20Once%20the%20vegetables%20are%20cool%20and%20the%20pickling%20brine%20has%20cooled%20to%20room%20temperature,%20divide%20the%20vegetables%20between%20mason%20jars%20(or%20to%20another%20container)%20and%20cover%20with%20brine.%20Refrigerated,%20they%20will%20keep%20for%20a%20week.%20Enjoy%20with%20your%20favorite%20Mexican%20dishes.%3C/p%3E%3Cp%3E*%20When%20we%20made%20our%20pickling%20brine,%20we%20didn%E2%80%99t%20measure%20any%20of%20the%20ingredients,%20but%20we%20kept%20in%20mind%20the%20ratios%20from%20the%20original%20recipe.%20Alice%20calls%20for%201%201/2%20cups%20white%20wine%20vinegar%20(which,%20she%20says,%20you%20can%20easily%20sub%20with%20red%20wine%20vinegar)%20but%20we%20used%20apple%20cider%20vinegar%20and%20distilled%20white%20vinegar%20after%20reading%20other%20recipes%20for%20pickled%20jalape%C3%B1os.%20We%20also%20didn%E2%80%99t%20use%20quite%20as%20much%20water%20as%20the%20recipe%20calls%20for.%20When%20it%20comes%20down%20to%20it,%20feel%20free%20to%20tweak%20things%20here%20and%20there.%20Taste%20the%20brine%20before%20you%20add%20the%20vegetables%20and%20add%20more%20sugar%20or%20vinegar%20or%20whatever%20you%20think%20it%20needs.%20Have%20fun%20with%20your%20food,%20and%20enjoy%20pickling%20the%20bounty%20of%20the%20season.%3C/p%3E){kind=link}
